Utica Style Breakfast

Amazing what you can do with leftovers. Buttered potatoes, spinach or escarole, ham, peppers and eggs make this the most delicious combinations of flavors and really can be a great breakfast, lunch or dinner. Check out this meat packed meal that everyone in the house will love. Oh and you can add whatever you like I have some other suggestions below.

So don't throw out those leftovers let's get creative!

This is a typical Utica New York Breakfast.


It's full of sausage, capicola, escarole or spinach and just bursting with delicious fresh flavors.

If you ever get to my hometown you can always find a great restaurant that has a delicious breakfast with eggs,escarole and Italian meats.

One Of my Favorite Breakfast


I just love everything in this breakfast.

It has potatoes, greens, meats and compliments the eggs.

If you ever want all in one plate breakfast this is it.

UTICA STYLE BREAKFAST RECIPE

prep time: 10 minscook time: 20 minstotal time: 30 mins
A delicious Italian Breakfast

ingredients:

Cut and peel 2 small potatoes into 1 inch chunks and fry until golden brown and crisp, set aside (or use leftover boiled potatoes in butter)

1 link Italian sausage cut in small slices and fried, set aside.

3 slices of prosciutto, ham or capicola ( I used Italian hot capicola) .

2 cups boiled escarole drained or fresh spinach

2 eggs ( these will be fried but you can make them any way you like)

peppers of choice.

optional : chopped tomatoes, slices of zucchini, mushrooms, cooked bacon, leftover roast beef, leftover pork chops cut up, chopped eggplant, kale, swiss chard, onion, any kind of cheeses like provolone, mozzarella, havarti, swiss, jack.

instructions:

In a large frying pan add saute the potatoes in butter or  olive oil until browned and crispy. Remove on paper towel and set aside.

Add the escarole with garlic and saute with 1/2 teaspoon garlic powder.
Add the sausage sliced in small pieces and ham already cooked..
If you like peppers add:
1 sweet or hot long Italian or even cherry peppers – sliced in strips.

Make the eggs separately fried or scrambled.
Add the eggs over the top of the potato, peppers and meat mixture on top of the bed of greens.
