A very Merry bunch and more than a few good men!

( Nephew Matthew, brother John, husband Nemo, son Curt, nephew Devin and son Chad on the end)

All with hearty appetites~ my handsome bunch! Who can resist such merry men?

Mediterranean Marinade

1/3 cup olive oil

2 lemons seeded and juiced around 1/2 cup ( if you don't have lemons use white wine which we use all the time for the leg especially)

1/2 cup fresh oregano chopped or 1/4 cup dried oregano

6 garlic cloves (chopped)

1 teaspoon salt 1/2 teaspoon freshly ground black pepper

1/4 cup fresh parsley chopped or 2 tablespoons dried

2 tablespoon fresh mint or 1 tablespoon dried

4 pounds leg of lamb or chops

Place the marinade in a big enough container to hold the lamb.

Marinate for 4 hours or overnight before cooking.

Grill, bake or fry.

Bake the whole leg on a slow low heat in half the juices on 250 degrees for around 1/2 hour per pound.

  3. First of all, that marinade sounds delicious. I still have never had lamb. (Except in a Gyro).

You have a good looking family. And yes, that truly is one of the blessings in life.

That's an awesome idea for paying off layaways. I haven't seen that one around here. It is indeed a blessing to give to someone in need. My wife and I ring the bells twice a season and we pick a family in need through the Salvation Army and give to them rather than to each other. A tradition we've done now for 3 years.

A very happy New Year to you and yours Claudia!

  6. What a beautiful idea - Secret Santa in retail! All heart - all in the spirit of the season. Thank-you so much for doing that - it just warmed my heart. I love that people still do layaway rather than charge.

As for the lamb - perfect - my favorite way to marinade it.

Your family is so beautiful - I think it's cause of all that love.

  9. Wow that a flavorful marinade. I bet it would make old boots taste good.
I hope you got some help coking out of that group. I think you need a New york phone book on your empty chair in the last picture. 2 cushions are soft and you will sink down in them.

  10. So sweet of you to adapt the gesture of paying off someone's debt. That does reflect the true spirit of giving!
Your lamb does sound delicious, I know you had to prepare a bunch since the men outnumbered the women!
Glad to see that after all the retail hours you got some quality time with family. XOXO
