However, while I absolutely love digging into the fruity goodness of a warm apple dessert like this one.

Now even though I spend almost every day in the kitchen, I tend to keep my personal baking pursuits on the simple side of things.

Well, sometimes my sweet tooth is calling the shots and demands dessert and this is fast and easy.

This easy applesauce mug cake recipe came about from the desire to prepare dessert for my hungry men when they come home and I am not in the mood to dirty up the kitchen!

Microwave Mug Shortcake

A quick, easy 1-minute dessert in a mug, you will always have time for this sweet mug dessert!

Prep time: 5 MinCook time: 1 MinTotal time: 6 Min

Ingredients

  • 3 tablespoons all-purpose flour, or you can use almond flour
  • 1/4 teaspoon baking powder
  • pinch of salt
  • 1 tablespoon plus 1 teaspoon water
  • 2 1/2 tablespoons applesauce
  • 1/4 teaspoon vanilla
  • 1/8 teaspoon cinnamon
  • 1 -1/2 tablespoons sugar or use stevia to taste
  • Optional: sliced almonds
  • Cooking spray
  • Microwave-proof mug
  • Any fruit, IE, Strawberries, blueberries, raspberries
  • Garnish: whipped cream, ice cream, ice cream topping
  • Optional: warmed strawberry jam to substitute for berries

Instructions

  1. Mix the sugar, flour, salt, cinnamon, and baking powder.
  2. Stir to combine. Add the applesauce, vanilla, and water.
  3. Spray the mug generously with cooking spray.
  4. Pour in the batter.
  5. Microwave for one minute.
  6. Remove from the cup and place on the plate.
  7. Garnish with fruit and whipped cream.
  8. Notes: You may have to adjust the sweetness and microwave time.
  9. I like my cake a little sweeter than most. Always test the batter since there is no egg in it to adjust the sweetness to your liking.
  10. For additional sweetness, warm some strawberry jam in the microwave and dip the strawberries in it before topping your dessert with them.
  11. Note: the recipe is based on my microwave power, which is 1100 watts. This mug cake cooks in 1 minute. Adjust accordingly. I would cook it less in a higher-wattage models.
