Chicken and beef are terrific substitutes in a pinch, I just love the smokey taste of ham or even pork chops.

I usually love a little heat in my soup, the hot cayenne pepper really kicks up the flavors.



Feel free to add some cayenne pepper or red pepper flakes.



I leave it out when the little ones come over, they're not fans of spicy foods.

Potato and Ham Soup

One of the creamiest and easiest potato soups you will ever make!
This has vegetables and ham and a whole delicious meal in one pot in no time! Quick and Easy

ingredients:

6 cups cubed and peeled potatoes
3 sprigs chopped fresh parsley
1/2  tablespoon salt or more to taste
5 cups water
1 teaspoon granulated garlic powder
2 cloves minced garlic
1 stalk celery finely chopped
1 cup carrots chopped in small pieces
1 cup grape tomatoes
black pepper to taste
2 cups cubes leftover spiral ham or any kind of ham
1 - 12 ounce can evaporated milk I used fat free

1/4 cup cubed butter at the end

optional: 1/4 cup minced onions, cayenne pepper

instructions:

Place the water, potatoes, chopped vegetables, herbs, spices all in a soup pot.
Bring to a boil and add the ham. simmer 20 to 25 minutes or until vegetables are soft.

Add the butter and milk, simmer another 30 minutes

This is great topped with shredded sharp cheddar cheese or any other of  your choice.
