A glorious birthday celebration is enjoyed by many families and friends.

My very favorite day of all.


The meaning sometimes is truly forgotten of how this wonderous day came about and celebrated by Catholic families around the world.














Christmas or Christmas Day is an annual holiday, celebrated on December 25, that commemorates the birth of Jesus of Nazareth. The date of commemoration is not known to be Jesus's actual birthday and may have initially been chosen to correspond with either the day exactly nine months after some early Christians believed Jesus had been conceived, a historical Roman festival, or the winter solstice. Christmas is central to the Christmas and holiday season, and in Christianity marks the beginning of the larger season of Christmastide, which lasts twelve days.



Although a Christian holiday, Christmas is widely celebrated by many non-origins. Popular modern customs of the holiday include gift-giving, music, an exchange of greeting cards, church celebrations, a special meal, and the display of various decorations including a decorated Christmas tree, twinkling lights, garland, mistletoe, nativity scenes, and holly. In addition, Father Christmas (known as Santa Claus in some areas, including North America, Australia, and Ireland) is a popular mythological figure in many countries, associated with the bringing of gifts for children.



































One of our favorite meals is breakfast. Normally my two grown sons Chad and Curt, come to spend the night on Christmas Eve, and when we get up the next morning on Christmas Day everyone has a different breakfast food they love to make. All of us have some of this Italian Sausage ( homemade sausage recipe at the end of this post), Peppers, and Scrambled Eggs.

Along with that my son Chad will make some Baked French Toast my other son Curt, will get the eggs scrambled and my husband Nemo and I will get the coffee on, relax and watch our two cat babies Catrina and Fonzo play with their new toys. I love this family day.

I really hate that it is still so dark when we get up at 6am... but the Christmas lights make it much better so we leave them on all night.

Neither one was too happy to be dressed for the occasion, but before they open their presents they both have to be dressed appropriately.

Sweet peppers, sausage, eggs, and mozzarella breakfast are served.

A blessed family favorite breakfast on Christmas morning.


Tips:



If using fresh hog casings prepare the hog casings the day before by soaking in water with a little orange juice and salt.

As you make the sausage twist the casing every 3 or 4 inches as you fill it to the length you desire.

Use a toothpick to poke little holes here and there along the sausage.

This will prevent the sausage from exploding when cooking.

Rinse the salt out opening the tubes and removing all the salt.

Keep the casings in warm water to keep them soft and flexible while making the sausage.







Mom's Homemade Italian Sausage Recipe



This recipe uses 25 to 26 pounds of pork butt that has a blend of fat in it, the shoulder is very lean in comparison if you use it, add at least 3 pounds of ground pork fat to pork butt or shoulder.  This sausage will create about 24 pounds of sausage, have the market grind this for you, or if you prefer you can use Turkey but that also needs fat to make sausage not so lean. This recipe can cut in half also.

Hog Casings (Prepared As Instructed Below)

2/3 Cup of Salt
1/2 Cup Sweet Paprika
1/2 Cup Pepper
1/4 Cup Fennel Seed
1/2 Cup White Wine

1/2 Cup Red Pepper Flakes this will make a medium-hot sausage

you can make herb-flavored by adding minced garlic, parsley, oregano, and basil, usually a 1/4 cup of each to taste.



Tools:

You will need a funnel tube and stuff by hand (or purchase an attachment for your industrial mixer sausage attachment.)


Recipe Instructions


Mix all the ingredients together using the ground pork butt, usually, we mix by hand, until well combined with seasonings.

Put casing on the funnel or machine and stuff. Twisting the links however long you want them 4 to 6 inches is usually the best size.

We usually freeze on parchment paper (and store in freezer bags), you can use this making many other Italian recipes and even make patties, or leave some loose for a sausage roll.





Breakfast Christmas Morning

Mom's Sausage and Egg Breakfast Recipe

2 lbs of Italian Homemade Sausage or store-bought

4 Red Sweet Italian peppers cleaned sliced

1 Green Bell Pepper sliced

1 dozen eggs beaten, beat eggs, add 1/4 teaspoon of minced garlic, salt, and pepper to taste

mozzarella shredded

Italian flavored bread crumbs



Fry sausage in oil with sliced peppers till browned. Remove from pan, cook eggs in the sausage oil until softly scrambled. Add mozzarella to the top, make Italian toasted bread on the side. Sprinkle Italian flavored bread crumbs on top. Italian toast Happy Holidays from our Family To Yours
