Date Bar Squares Recipe

Wednesday, May 18, 2011
If you love a date nut bread these squares are super easy and delicious in a brownie style pan, we love making these tasty morsels and they are perfect with a cup of Joe.

During the fall months dates are super easy to find but the squares are so delicious you can actually use figs also!

Soaked in espresso and bourbon or brandy these will be a huge hit, of course you can also do this with raisins or other dried style fruits even pineapple!

Date Bar Squares Recipe

4 tablespoons butter, at room temperature

1 teaspoon baking soda

3/4 teaspoon salt

3/4 cup brown sugar

1 cup hot espresso coffee

1 large egg

1 teaspoon pure vanilla extract

3 tablespoons bourbon or brandy

1/2 teaspoon baking powder

1 3/4 cups flour

1 cup chopped pecans or filberts

8 ounces of chopped dates (about 1 1/2 cups)
soak the dates in the coffee and bourbon.

Mix everything else together just until combined with the dates.

Bake at 350 degrees until the middle is cooked using the toothpick method.

Cool completely, I like to dust them with powdered sugar after cutting in squares.

  10. Using dates in a recipe adds such good natural sweetness. I made some apple squares on Sunday and sub.PB for butter and added dates along with the chopped apples. So good.
I'm in the mood for good old date bars now. Thanks for sharing Claudia.

  16. My Mom used to make dates squares, but out of a "box". she made good pies, but wasn't an adventuresome baker. I'm sure that these are so much better! I'm book marking these!

  17. You can tell this is an old fashioned recipe, because the new recipes do not call for sifting the flour.

I can tell just by the ingredients, and the method that this truly is a "tried and true" recipe by your dear departed mom.
It sounds really delicious and healthy, and it looks even more...lucky me, I still have 1/2 a bag of dates from a huge bag from Costco to use up:D

    Thanks for sharing, Claudia!
