Sauteed Chicken with Yellow Squash Recipe


This is a very delicious chicken, squash and rice dish. Everything in this is so flavorful and fresh. The chicken is very juicy and tender. I am sure you will see that this one is a big hit with your family.



Chicken with Yellow Squash Recipe

4 boneless chicken breasts into long tenderloin pieces
2 cups boiled rice
1/2 cup mixed peas and carrots fresh or frozen 
1/4 cup teriyaki sauce
1 cup white wine
1 teaspoon granulated garlic powder
salt, pepper to taste
3 yellow squash sliced lengthwise and seeds scooped out
4 tablespoons butter
1 cup Flour seasoned with 1 teaspoon granulated garlic and Italian seasoning , salt, pepper
Oil for frying

In a casserole dish, place the yellow squash hollowed out in the greased pan.
In a small bowl mix rice with vegetables, teriyaki sauce, salt, pepper and garlic.
Fill each squash with rice mixture. Set aside.
Place the flour mixture in a zip lock bag. Shake chicken in it.
Heat oil and fry chicken on both sides until browned.
Place on top of the yellow squash filled with rice.
Add 1 cup white wine on the bottom of the casserole dish. Cover with foil.
Bake at 350 degrees for around 35 minutes or until squash is fork tender.
