This peanut butter filling is truly the way to a peanut butter lovers heart for sure! Using the filling in a chocolate cupcakes or a chocolate baked layer cake will take you to the next level of yum!
Whenever I need to bake a special cake and there is a peanut butter lover, this is my go to recipe! A sure winner every time.
In the photo I have filled the cupcakes with peanut butter filling, added some mini chocolate chips, in the center. I didn't add back the centers, I used them for making trifles with layers of pudding. You can just frost over the tops of the cupcakes. Also there is ice cream and chocolate sauce on top.
When I make a two layer cake, I fill the center and spread it out. Then add the second layer and frost. You can also make a sheet cake, cut is in half, fill and frost. If you want to make a four layer cake, make two 9 inch split in half and double this recipe for the filling to fill each layer.
To really get the creamiest ever filling, I always use just a touch of heavy cream. Of course I then recommend this cake always remains in the refrigerator until ready to serve with when using cream. I have used non dairy creamer in the past, just a splash. That is perfect when its for an outdoor picnic or event to leave it out.
This is every kids answer to a peanut butter cup filled chocolate cake. Every time I start to cook, bake or mix anything, my future chef and grandson Antonio is right there to help me. Antonio is a diehard chocolate and peanut butter lover indeed.
He was ready to eat this before it was even done! He just couldn't wait to dive into his cupcake. Not sure if he loved the filling more than the cake! It is so delicious all by itself!
Antonio will turn 4 years old on February 25th. All of his favorite flavors are here all in one cake. I love making memories like this with him in the kitchen. It reminds me of my mom and I when I was little, we always made things together. Now I am enjoying making memories with my grandson, Antonio.
He loves Olaf from the movie Frozen. I just print off coloring book pages, frosted the cake with whatever kind of frosting you would like (of course chocolate was his choice). I then take a toothpick and draw the character on the frosted cake. Tint the frosting, then fill it in with using cake decorating tools, you can find on my shop with me page in the head of the blog. I sprinkled him with sugar to get a snowy effect. He loved it!
I also decorate cakes or top of the cupcakes with chopped pieces of peanut butter cups sometimes. It's certainly a sweet tooth's dream cake with that addition!
In the video I don't use the electric hand mixer so you can see just how easy it is to make. I do however use the beater to enhance the creamy texture of this.
The easiest way I found to fill the cupcakes is I take an apple corer and remove the middle. Add the filling to a zip lock bag filled with this decadent peanut butter filling. Then just fill the centers with ease!
I then top the cakes with my favorite frostings and decorate to the theme. Sometimes I even drizzle some melted chocolate on top.
