This easy confection easily can be made with white. milk or dark chocolate and the kids can also make them.
These are so simple to make it's really not a recipe, just a great little creative idea to add to any wonderful Easter dessert platter or if you're making homemade candy to give as a gift at Easter.
The little crunchy chocolate-covered Asian-style noodles have the perfect blend of a salty chocolate treat and these are really are a delicious little fun confection.

Fun and Easy
The Asian noodles can be found in the International section of any supermarket, they are crispy fried wheat and rice flour combination.
This super easy confection of crispy noodles and chocolate turns into a wonderful little birds nest with jelly beans in the center.
A delight for the young at heart and especially the little ones waiting for the Easter bunny to arrive.
This recipe is a perfect addition to any Holiday Cookie Tray as well.
Ingredients You Will Need To Nests (see below recipe card for measurements)
- Asian Crispy Noodle
- White, Milk, or Dark Chocolate
- Jelly beans
- Garnishes and Suggestions: Holiday-themed colored sprinkles or nonpareils, chopped nuts, coconut, chopped dried fruits, chopped candy bars, mini chocolate chips, orange zest,
- Optional Food Coloring for white chocolate to make it pastels or another color you prefer besides white, different flavored chocolate chips or you can also use mini malted milk eggs for the center instead of jelly beans
- substitute rice Krispies or cornflakes for noodles adding coconut for the effect
Tool You Will Need:
- Cookie sheet
- Wax paper
- mixing bowl
- Microwave safe bowl
- spoon
- Storage containers with covers
- spatula
- mini muffin pan or just drop them on wax paper
Tips:
- set them on either Easter grass or on tinted coconut
- melt the chocolate in 30-second intervals
- if the chocolate gets too thick add 1 teaspoon of shortening at a time
- Use colorful candy sprinkles or sugars to match the theme or the holiday or party
- Tint the white chocolate for pretty colorful candy
- Store in airtight containers with wax paper in-between

Teaching Kids to Cook
A wonderful family tradition can be made and teaching kids how to cook with this easy treat that only requires the microwave for melting the chocolate with your supervision and help.
Perfect using a mini muffin pan to get these in perfect shape and they will pop out easily with a little oil spray.

Easter Bird Nests or Haystacks

These are haystacks or bird nests made with Asian noodles and chocolate. There are many additions and substitutions to make this easy confection for Easter.
Ingredients
- 1 -1/2 cups ( small can 3-ounce can)Asian noodles(or use cornflakes, rice Krispies with some shredded coconut for the effect of haystack nest)
- 1- 1/4 cups of dark, milk, or white chocolate ( you can tint white chocolate with pastel food coloring to change the color) or use another kind of flavored chips, peanut butter, butterscotch, mint, melting chips
- Oil spray mini muffin pan and set aside.
- Mini jelly beans or mini chocolate malt eggs
- note: if chocolate seizes up add 1 teaspoon of shortening
- Options:
- Dip in melted white or milk chocolate
- top with colorful sprinkles
- sprinkle with colorful sugars
- use butterscotch or another flavored chocolate
- add some crushed nuts
- add in tinted coconut
- substitute cereal for noodles with the addition of coconut
- add 1 teaspoon of peanut butter to the chocolate but this will keep them a softer set, I usually prefer to use the melting chips but this is an option.
Instructions
- Prepare your mini muffin pan (cooking oil spray).
- In a medium-sized bowl melt the chocolate of choice ( I always add 1 tablespoon of vegetable shortening to ensure it's smooth) and melt for 1 minute stirring at 30 seconds.
- Add the can of crunchy noodles.
- Stir completely coating.
- Spoon into the mini muffin pan, top the haystacks with jelly beans or malted milk eggs.
- Refrigerate until firm then pops them out with a butter knife and lift carefully.
- I store mine in an airtight container in the refrigerator until ready to serve.
- You can also place them in pretty cupcake paper Easter liners.
- These look great on any cookie or candy tray.
