2/3 cup sugar
2 eggs
2 ounces unsweetened chocolate, melted
1 teaspoon pure vanilla extract
1/3 cup butter, softened
2/3 cup heavy whipping cream
2 teaspoons confectioners' sugar
Whipped cream and chocolate curls, optional
1 1/2 packages crushed graham crackers( reserve 1/2 cup) or use a deep dish pie crust baked and cooled
2 Tablespoons melted butter
1 tablespoon sugar
1 shot glass of Frangelico
In a medium size bowl add crushed crackers. melted butter and 1 tablespoons sugar. Press into a pie plate. Pour the Frangelico on top of whatsever crust you use evenly. Set aside.
In a small saucepan, combine sugar and eggs until well blended. Cook over low heat, stirring constantly, until mixture coats the back of a metal spoon and thickens. Remove from the heat. Stir in chocolate and vanilla until smooth. Cool to lukewarm , stirring occasionally. In a small bowl, beat and cream butter until light and fluffy. Add cooled chocolate mixture; beat on high speed for 5 minutes or until light and fluffy.
In another large bowl, beat cream until it begins to thicken. Add confectioners' sugar; beat until stiff peaks form. Fold into chocolate mixture.
Pour into crust. Chill for at least 6 hours before serving. Garnish with whipped cream and crushed reserve graham crackers and or chocolate shavings or chunks.

ReplyDeleteOoh, my bottle of Frangelico is almost empty, I will need to check if there is enough to make this fluffy creamy treat! This is a nice change from all the fruit pies all around. Who can resist this blissful flavor combination!-Yum.
