A great side dish with any meal! I usually just eat this as a whole meal, add some garlic bread, a salad loaded with beans and vegetables, a good Chianti wine and I'm good to go! |
2 cloves finely minced garlic
1 green pepper, chopped
1 (28 ounce) can diced tomatoes
1 (16 ounce) can tomato sauce (I have also used hot salsa in it's place)
1 1/4 cups water(or use chicken broth if you have some on hand)
1/4 cup red wine or sherry ( this is optional if you don't want to use wine add more broth)
2 1/2 teaspoons chili powder (or to taste)
1/4 cup red wine or sherry ( this is optional if you don't want to use wine add more broth)
2 1/2 teaspoons chili powder (or to taste)
1/4 teaspoon salt
1/2 teaspoon each garlic powder, black pepper, basil and oregano
pinch of cayenne pepper
2 tablespoons Worcestershire sauce
2 cups converted raw rice
3 stalks celery, finely chopped
grated colby or cheddar cheese (optional)
Anen to the good Chianti. The rice looks delicious!
ReplyDeleteAnnette was telling me last week I need to come up with a good Spanish rice recipe. Thanks for the recipe.
ReplyDeleteThis is just what the doctor ordered - start it early and feast later!
ReplyDeleteI love Spanish rice and I'm sitting here thinking why I've never made it at home. I eat it at Mexican restaurants and I love it there. duh.
ReplyDeleteI will try your recipe. :)
It looks heavenly!A must try!Greetings from Greece,dear!
ReplyDeleteMmmmm....this looks great, Claudia! I'd eat it as my entree, too :)
ReplyDeleteThis is absolutely mouthwatering and do love the idea of combining it with a good Chianti!
ReplyDeleteGreat rice side dish, good enough on its own!
ReplyDeleteI'd definitely eat this as an entree and the chianti goes perfectly. Crock pot cooking really rocks. I never seem to do enough with the slow cooker.
ReplyDeleteThis sounds great. I would absolutely eat this as a meal all by itself.
ReplyDeleteThis is packed with flavor and incredible sounding! I would eat it as a main too with some crusty bread - out of this world delicious!
ReplyDeleteWow - I agree with Anita - this almost a meal by itself. Add some diced sausage and there you go! :)
ReplyDeleteMmm, I don't think I'd need any sides - what a lovely recipe.
ReplyDeleteThis looks delicious Claudia. My mom always made such good Spanish rice but Bev just doctors some Rice a Roni. Your version will be on the menu soon.
ReplyDeletethis sounds good, definitely a great excuse to break out the crock pot
ReplyDeleteI would need nothing more than Spanish rice and Chianti for a totally satisfying dinner.
