Grilled Scallop, Shrimp and Vegetable Skewers

When summer hits, it's time to fire up the grill and keep meals light and flavorful but still free up your time to enjoy the day.

This easy seafood grill recipe combines succulent large shrimp and juicy grilled marked scallops with smoky grilled zucchini—perfect for a light dinner, backyard BBQ, or a low-carb meal.

With just a few fresh ingredients and a hot grill, you'll have a restaurant-worthy seafood platter ready in minutes so you can enjoy your guests and the meal.

Basic Grilled Scallop and Shrimp FACTS

  • Can I use frozen shrimp or scallops? Yes! Thaw them completely and pat dry before grilling.
  • How do I keep shrimp from sticking to the grill? Brush with oil and grill over medium-high heat for a quick cook time.
  • Can I grill everything on one skewer? You can, but shrimp and scallops cook quickly, so it’s better to skewer or grill vegetables separately.
  • What seasoning works best? Keep it simple: olive oil, lemon, garlic, herbs, Cajun, and a touch of chili flakes or Old Bay for spice.

Tips

  • Oil the grill grates to avoid sticking. 
  • Zucchini can be marinated in the same mixture as the seafood for extra flavor.
  • Add a smoky kick with a sprinkle of smoked paprika or grill over wood chips.

Grilled Scallop, Shrimp and Vegetable Skewers

This is a flavorful summer meal; this grilled shrimp, scallops, and vegetable medley is a must-try. Perfectly seasoned

Ingredients

  • 2 pounds of large scallops
  • 2 limes squeezed and 1 tablespoon of lime zest
  • 1/2 teaspoon garlic powder, dried parsley or fresh, cajun seasoning
  • pinch of cayenne pepper
  • dash of sea salt and pepper
  • Wooden skewers soaked in water
  • 2 zucchini cut into wedges
  • 2 yellow squash cut into wedges
  • 2 cups of grape tomatoes
  • 2 ears of corn cut in half
  • 1 tablespoon olive oil
  • garlic powder
  • 1 juiced lemon
  • 1/2 teaspoon zest
  • salt and pepper to taste
  • 2 tablespoons softened butter

Instructions

  1. Mix olive oil, butter, lemon juice, zest, garlic powder, salt, and pepper to taste in a medium-sized bowl to fit the vegetables in. Mix the vegetables and herb mixture and stir till well-coated.
  2. In a zip lock bag, place shrimp, lime, and seasoning in the bag.
  3. Marinate for 15 to 20 minutes.
  4. Soak the skewers in water while they marinate and the grill is heating.
  5. Heat the grill on high.
  6. Thread the shrimp on a skewer, either wooden or metal.
  7. Do the same with the scallops.
  8. Place on a heated grill or stainless mess grill tool, cook until shrimps are pink and scallops are a golden color, around 4 minutes on each side
  9. . Grill the vegetables to your desired doneness.
  10. We like the vegetables crispy, which took around 5 to 8 minutes, stirring and turning.
  11. Corn is cooked when the grill marks appear.
  12. I recently purchased this stainless steel mess grill cooker.
  13. You can also use a gridded cast iron griddle or any other type of gridded pan for the grill.

  15. he results were terrific. The corn, fish, and vegetables were perfectly done, and the tender juices were absorbed in the grilled flavors.
