If you have plain leftover rice you can transform it into a delicious side dish. Read on to see how you can make a great meal with a few ingredients you may have in the house.












Best Leftover Rice Recipe EVER!



2 cups leftover rice or freshly made

1 zucchini cubed

sliced grape tomatoes cut in half around 8 to 10

corn leftover off the cob or frozen

leftover cooked meat like steak, pork or chicken around 1 cup

garlic, onions, minced to taste around 1 tablespoon each

1 egg

2 to 3 tablespoons olive oil

1 tablespoon butter

cayenne pepper, black pepper and garlic powder to taste

soy sauce

In a large frypan, melt butter and then add the 1 egg on medium heat, stir until egg is scrambled and set. Add the rice, zucchini, garlic, rest of the oil, onion, and sauté until rice is browned stirring continuously on medium heat. Add the corn at the end with cooked meat. Stir in grape tomatoes. Add the spices to taste.

Add 2 tablespoons soy sauce and 3 tablespoons water. Stir and serve.



Other suggestions 1 cup of any combination below added to the zucchini step:



Sliced mushrooms

Julienne carrots

Shrimp and scallops or another shellfish substitute instead of meat

Fresh spinach

Chopped celery

Sliced green bell peppers

Artichoke hearts

Snow peas

Water chestnuts

Shredded cabbage

Cubed eggplant



Any kind of nuts can be added too, such as sliced peanuts, cashews, almonds (or seeds like sunflower) around 1/2 cup.
