When I was growing up we always had red cabbage sauteed in garlic.
I still love it the way she cooked it, it's funny I only see it most of the time shredded in salads.
This is a great way to get the healthy benefits out of this pretty vegetable and making it a delicious side dish for sure.
Boiling It and Tips
I found that boiling it makes it very tender.
But if you want to preserve all the vitamins in it, see my tips below.
Boiling it does take some of the vitamins out of any vegetable, so I do prefer to use another method.

Tips
I have a little tip!
Freeze the whole head of cabbage first and when it thaws, it will wilt and be very soft already.
Rinse and saute.
I don't always have time to wait for thawing.
Also, make sure it's in a plastic bag, thawing can get really messy with this color!
It really is so easy to do, just a little harder to cut up, so I use a kitchen food scissor!

Italian Red Cabbage

This is a seasoned Red Cabbage Side Dish
ingredients:
2 cloves minced garlic
1 medium head red cabbage
2 tablespoons aged balsamic vinegar
2 teaspoons granulated garlic
salt, pepper and cayenne pepper to taste
dried oregano
olive oil
instructions:
Boil the head of cabbage cut into quarters until tender. Drain. Rinse.
In a large fry pan add 3 tablespoons olive oil and add garlic. Saute 1 minute add the drained cut up cabbage. I sliced it while soft even smaller with a cooking scissors to make it into strips.
Continue to saute adding granulated garlic, salt, pepper to taste for around 10 minutes turning often using medium heat.
Add the balsamic vinegar at the end and toss.
Served as a side dish with any kinds of meat.
