Let's face it, most leftovers are boring, aren't they? Not these leftover stew mini pot pies, they are far from boring!


Not only are they a delicious tasty mini pie with but a great way to repurpose those leftovers


Using leftover stew that everyone loves, it's even better the second time around.


Making these Leftover Stew Mini Pot Pies in a cupcake tins are a fun way to eat them too.


An economical second meal with a hearty comfort little pie all made in a cupcake tin and cleanup is a breeze!

How cool would these be to take to work for lunch or school?


They're perfectly portable.


You can also make them ahead of time and freeze them.


They will be fine reheated in a microwave.







A Few Tips:


  • Spray the cupcake tins generously before placing the pie crust in
  • Phylo dough is a great substitute for pie crust
  • Brush the edges with egg wash to seal
  • If freezing wrap in parchment paper than a freezer bag, you can use the paper to reheat in a microwave
  • Use any kinds of stew you like homemade or even canned
  • Store-bought pie crusts or boxed are fine to use
  • Brush the tops with melted butter for a flakier crust

Easy to assemble



When I was growing up, mom loved to make a big pot pie with leftovers all in one large casserole dish.


She was a very creative mom when it came to using up meals the second time around.


I loved her homemade pie crust, it made everything taste better.


That was the best part with all the sauce oozing out the sides of the crust as it bubbled out while baking, I use to save the crust for last.


I love those charred edges of the pie crust too, it was always so tasty.

Leftover Stew Mini Pot Pies

These a mini pot pies made in a cupcake tin with leftover stew

ingredients:

  • Premade Store-bought dough or home
  • 2 pre-made store-bought pie crusts or make homemade
  • Optional: egg yolk to brush on top and butter
  • Slow Cooker Italian Pork Stew Recipe below
  • (or use your favorite stew recipe leftovers!)
  • 6 boneless thick pork chops cut into small pieces around 3 pounds
  • 4 cubed potatoes
  • 3 zucchini cut
  • 3 plum tomatoes cubed
  • 1 cup peas
  • 1 cup sliced or finger carrots
  • 1 stalk celery
  • 1 pound fresh mushrooms
  • 1 pound green beans cut
  • 1 can crushed tomatoes
  • 2 sliced bell peppers
  • 1 teaspoon each Italian seasoning, granulated garlic, salt, pepper
  • cayenne pepper is optional to taste
  • 1 - 28 ounce can crushed tomatoes adding 1/2 cup Cabernet wine to the can to rinse out the rest

instructions:

How to cook Leftover Stew Mini Pot Pies

  1. For the Stew Recipe:
  2. Dump everything into your slow cooker stirring to evenly coat. Slow cook on high 6 to 8 hours or low for 8 to 10 hours.
  3. For assembling the mini pot pies:
  4. Spray cupcakes tins with oil cooking spray.
  5. Line each cupcake tin with dough. Add the stew.
  6. Top with more dough. Brush edges with a beaten egg. Crimp edges. Dot with butter.
  7. Bake at 400 until tops start to brown. Around 25 minutes.
