These are delicious easy pumpkin spice cookies using a spice cake mix. The cookies are perfect in a hurry for bake sales and parties. Decorate them or leave them plain they are a delicious fall flavored soft cookie.
Ingredients
- 1 package spice cake mix
- 1 egg
- 1 (15 ounces) can solid pack pumpkin or 1- 3/4 cups fresh pumpkin puree
- 1 cup dark, milk or white chocolate chips
- 1 teaspoon cinnamon
- 1/4 teaspoon allspice or pumpkin pie spice
- Optional: 1/2 cup chopped walnuts,
- Garnish powdered sugar or use powdered sugar and water frosting
- Frosting Suggestions:
- canned cream cheese frosting
- Tinted yellow and red food coloring for frosting
- Halloween sprinkles and different colored sugars
- Candy pumpkins, bats, bones, etc for Halloween for in party stores
Instructions
- Preheat oven to 350 degrees. Parchment lined cookie sheets or use silpat mat.
- In a large bowl, stir together the cake mix, egg. spices and pumpkin until well blended. Fold in the chips. Drop by rounded spoonfuls or ice cream ball scoop onto the prepared cookie sheet.
- Bake until middles are set around 11 minutes.
- Options for decorating:
- Cool, frost, use sprinkles on top.
- Use the sprinkles before baking on top and bake.
- Leave cookie batter plain when baking, bake, cool, then dust with powdered sugar.
- Frosting Homemade:
- 2 cups powdered sugar
- 1 tablespoon softened butter or whipped cream cheese
- add water to make a thick frosting
