This fresh blueberry cake mix cake is so quick and easy and tastes just like it was made from scratch.

I love doctored cake mix cakes and this with the addition of fresh blueberries and a hint of lemon makes all the difference in flavor.

Sometimes when you get caught off guard and need something quick in a pinch, it's hard to come up with a great recipe.

This is perfect for cupcakes, sheet cakes, bundt cakes, or just in a springform pan like I used to decorate elegantly.

Save a few extra to decorate the top and you will turn this ordinary cake into a beautiful addition to any dessert table.

We love making easy cakes with a cake mix and fooling everyone with it's not from scratch.

Fresh Blueberry Cake Mix Cake

Doctored Cake Mix using fresh blueberries in a yellow cake batter. The sour cream and lemon juice with zest makes this an outstanding simple dessert you will be proud to serve your guests. It's so moist and delicious!

Ingredients:

  • 3 large eggs
  • 1/4 cup white sugar
  • 1/3 cup canola oil or vegetable oil
  • 1 cup sour cream
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon lemon extract
  • 1 (15.25-ounce) box of yellow cake mix any brand
  • 2 cups freshly cleaned blueberries and blotted dry with paper towels or use another fruit suggestion
  • Preheat the oven to 350 degrees
  • Grease and flour a 9-inch springform pan, bundt pan, or any kind of baking pan you prefer
  • Optional Toppings:
  • Dusted with powdered sugar
  • Cream cheese frosting
  • Vanilla frosting
  • Orange frosting
  • Whipped cream
  • Ice cream
  • Other Fruits To Use:
  • Red Raspberries
  • Blackberries
  • Peaches
  • Apples
  • Strawberries
  • Boysenberries

Instructions:

  1. Beat the eggs and sugar in a medium-sized mixing bowl with an electric beater until light in color for around 2 minutes.
  2. Add in the oil, sour cream, lemon juice and extract, and lemon zest, and beat on low speed until smooth.
  3. Keeping the mixer on low speed, add in the dry cake mix.
  4. Beat until smooth and no lumps appear around 1 minute.
  5. Using a spatula, fold in the blueberries.
  6. Pour into the prepared pan.
  7. Bake for 45 to 50 minutes, or until a toothpick comes out clean when inserted into the cake. (The oven temperatures may vary so keep an eye on it.)
  8. This cake can be served with whipped cream, lemon curd, lemon pudding, ice cream or dusted with powdered sugar.
  9. Lemon Icing:
  10. Garnish Fresh Blueberries and Lemon Zest
  11. 2 cups powdered sugar
  12. 2 tablespoons freshly squeezed lemon juice
  13. 2 teaspoons freshly grated lemon zest
  14. 2 tablespoons milk more to make a free-flowing consistency
  15. Mix all together and pour on the cooled cake.
  16. Garnish with lemon zest and fresh blueberries.
  17. Store the cake in the refrigerator in a covered cake container.
