This is an easy low-calorie Panko Crusted Baked Chicken with Tomato and Peppers that's a terrific one-pan meal.

The chicken is baked in a casserole pan with fresh herbs, fresh tomatoes, sliced peppers and I even have a list of other yummy suggestions you can add.

Also, a low-calorie dinner that's perfect when you want a healthy lighter meal.

It's vibrant colors just shout summer and then with just a touch of this toasted panko bread crumb and grated cheese topping it compliments the freshly sliced tomatoes.

If you're looking for an easy dish, quick with just a few ingredients, this is perfect.

Then if there happen to be any leftovers, chopped this all up and serve it over a bed of white rice, on top of your favorite salad, or even in a low carb tortilla wrap.

There are so many alternatives when transforming a meal from fat to healthy fats and high calorie to low calorie without losing all the great flavors.



Vegetables enhance the taste of foods, and with the many suggestions I offer,  and this chicken dish can taste different every time you prepare it.



I love Parmesan Roasted Tomatoes, and the crunchy topping, however, this dish gives you this all in one bite in one casserole pan!

Ingredients You Will Need

  • Boneless Chicken Breasts Sliced 1/4 inch thick to 1/2 inch
  • Bell Peppers cleaned and sliced
  • Fresh Mushroom sliced
  • Minced garlic
  • Beefsteak or Vine Ripe Tomatoes sliced
  • a handful of Fresh Basil
  • a handful of Fresh Parsley save some for garnish on top after baking
  • Optional: dried oregano
  • Salt, Pepper to taste
  • Italian Flavored Panko Bread Crumbs
  • Olive Oil for drizzling over the top
  • Butter Melted to mix with the bread crumbs
  • Grated Parmesan Cheese

Other Additions:


  • Onions sliced or pearl onions
  • Sliced mushrooms
  • Broccoli florets or cauliflower
  • Green beans
  • Peas
  • Brussels sprouts
  • Potato wedges
  • Sweet Potato medallions
  • Fresh asparagus spears
  • Zucchini or another summer squash
  • Cabbage wedges boiled
  • Artichokes hearts

Tips in the Kitchen:


  • Use only vine-ripe sweet tomatoes or canned whole tomatoes have to be of very good quality like San Marzano
  • Use Italian seasoned panko bread crumbs
  • Use a parchment-lined pan for easy cleanup
  • For another flavor of seasoning try Taco Mix instead of Italian seasoning
  • Don't overcook the chicken, this will cook quickly as it's thinly cut
  • Some of the vegetables (like potatoes) need longer cooking, you may want to pre-cook certain ones in the microwave first before adding them to this casserole
  • Frozen vegetables can be substituted for fresh that's in the suggestions list
  • Leftover corn, carrots, or whatever vegetables you have can be added to the pan at the end
  • If the chicken is too thick it will be dry, add some low sodium low-fat chicken broth around 1/2 cup if you cut it thicker

Suggestions for Weight Watchers:



  • Use crushed pork rinds instead of panko (perfect alternatives for diabetic meals also)
  • Substitute chicken with lean turkey breast filets for a change
  • Slice the chicken or turkey breast into strips and air fry with vegetables of choice for low carb fillings for a wrap
  • Seafood of any kind can be used in place of chicken
  • Serve the chicken and vegetables on top of a vegetable salad
  • Use pumpkin seeds, sunflower seeds, slivered almonds instead of panko or another nut you prefer on top of this casserole

If you are looking for a healthy baked chicken topped with vegetables that easy all in one pan, this is a great recipe. Even the leftovers are great in wraps, on top of salad and it's the perfect light warm weather meal!

Ingredients:

  • 4 Boneless Chicken Breasts Sliced 1/4 inch thick to 1/2 inch
  • 2 Bell Peppers cleaned and sliced
  • 8 ounces of Fresh Mushroom sliced
  • 4 cloves minced garlic
  • Beefsteak or Vine Ripe Tomatoes sliced
  • a handful of Fresh Basil
  • a handful of Fresh Parsley save some for garnish on top after baking
  • Optional: dried oregano
  • Salt, Pepper to taste
  • 2/3 cup of Italian Flavored Panko Bread Crumbs or use ground pork rinds
  • Olive Oil for drizzling over the top
  • Optional: 2 tablespoons extra virgin olive oil to mix with the bread crumbs
  • 1/2 cup or more Parmesan Cheese
  • Preheat the oven to 375 degrees.
  • Options:
  • Use crushed pork rinds instead of panko (perfect alternatives for diabetic meals also)
  • Substitute chicken with lean turkey breast filets for a change
  • Slice the chicken or turkey breast into strips and air fry with vegetables of choice for low carb fillings for a wrap
  • Serve the chicken and vegetables on top of a vegetable salad
  • Use slivered almonds instead of panko or another nut you like on top of this casserole
  • Substitute all olive oil or grapeseed oil for butter or omit totally
  • Other Options for Vegetables:
  • Onions sliced or pearl onions
  • Sliced mushrooms
  • Broccoli florets or cauliflower
  • Green beans
  • Peas
  • Brussels sprouts
  • Potato wedges
  • Sweet Potato medallions
  • Fresh asparagus spears
  • Zucchini or another summer squash
  • Cabbage wedges

Instructions:

  1. Mix the panko bread crumbs with oil and set aside if using.
  2. Slice the chicken in 1/4 inch thick slices, place on the parchment-lined 13 x 9 pan.
  3. Top the chicken with tomato slices, mushrooms, peppers, and sprinkle each tomato with panko.
  4. Add any other suggestions above you prefer.
  5. Drizzle the top with olive oil and evenly sprinkle with grated cheese.
  6. Place a little minced garlic on each panko top tomato.
  7. Sprinkle with salt, pepper, oregano, add the basil, and some parsley on top.
  8. Bake at 375 degrees for around 25 minutes, do not overbake the chicken.
