Brownie Mix Cookies Tips

  1. preheat the oven
  2. prepare and grease a brownie pan and set it aside
  3. In a large bowl combine all of the ingredients and mix well
  4. the batter will be sticky
  5. add any mix-ins
  6. use a cookie/ice cream small scoop
  7. drop cookies on the prepared baking sheet
  8. bake for 8 to 9 minutes
  9. cool completely frost or leave plain

Tips and Suggestions

  1. always preheat the oven
  2. any brand of brownie mix 18.0 (or sometimes they are a few more ounces)
  3. do not over-bake unless you like hard cookies at 8 minutes these stay chewy and soft
  4. butter can be substituted if melted first before adding
  5. just mix the batter until smooth and evenly combined
  6. for easy removal use parchment paper in the baking pan or cooking sprays
  7. for nut allergies use toasted pumpkin seeds or sunflower seeds
  8. frost with chocolate icing and add sprinkles on top to match a holiday theme
  9. cool completely if you would like to frost them or dust them with powdered sugar

Brownie Mix Cookies

Brownie Mix Cookies

Easy brownie cookies that start with a brownie mix and transform into baked fudgy delicious brownie cookies!

Ingredients

  • 1 18-ounce box of any brand of brownie mix (sometimes they are a little larger in ounces that's fine to use)
  • 2 eggs
  • 1 tablespoon water
  • 1/2 cup AP flour
  • 5 tablespoons vegetable or canola oil (butter melted can be substituted)
  • 1/2 cup of mini semi-sweet chocolate chips
  • Note: for a different flavor addition add 1 teaspoon of orange extract and 1 teaspoon of cinnamon or pumpkin pie spice ( these will give them a fall flavor).

Instructions

  1. Preheat the oven to 350 degrees line two baking sheets with parchment and set that aside.
  2. In a large bowl add all the ingredients and mix to combine evenly.
  3. Drop by the medium cookie scoop or large (large will take 3 minutes longer to cook and give you 20 cookies instead of 30.)
  4. Bake at 350 degrees for 8 minutes, these will be slightly crisp on the edges and very chewy in the center. For crispier edges and more cake-like in the center 11 minutes.
  5. Note: I would test one cookie to see if that's how you prefer them before baking a whole sheet full.
  6. Cool then remove from the cookie sheet.
  7. Store in air-tight containers. Cookies can be frozen for up to 6 months in freezer bags.
