Seriously Easy Homemade Brownies
Ok I get it, you're in a hurry, right?
I have that solution, use a boxed brand you prefer, just make the topping, and if you really want to fool them add a little drizzle of melted chocolate with a fork to look dazzling professional!
This recipe is super simple and has just a few steps, so don't be intimated about baking these at all I promise it's so easy!
Rocky Road ice cream was always a favorite flavor, so why not in a brownie they're a perfect summer outdoor picnic dessert also.
Shopping List for Rocky Road Brownies
- flour
- butter
- unsweetened cocoa powder
- instant espresso coffee
- vanilla
- white sugar
- salt
- dark, milk, or semi-sweet chocolate chips
- eggs
Tips
- Always preheat the oven
- there are no baking leavening agents in this recipe
- the butter should be at room temperature
- line the pan with parchment paper or heavily grease it with butter
- nuts are a great addition or toasted pumpkin seeds for food allergies
- do not overbake the brownies and use the toothpick method
- remember the topping goes on after baking

You can add any chopped candy bars, any kind of nuts, or even chopped maraschino cherries.
One combination we also love is milk chocolate chips and coconut.
But, whatever you add with a marshmallow combination is going to be spectacular in flavor.

Rocky Road Brownies

If you like rocky road ice cream, you'll love these rocky road brownies topped with marshmallows, chocolate chips, and crunchy nuts are of course optional.
Ingredients
- Brownie batter:
- 8 Tablespoons unsweetened cocoa powder ( I use special dark Hershey's cocoa)
- 1 cup butter
- 2 cups sugar
- 4 eggs
- 1 teaspoon vanilla
- 1/2 teaspoon espresso instant coffee or regular instant coffee
- 2 - 1/2 cups flour
- optional: 1 cup chopped nuts or toasted pumpkin seeds
- pinch salt
- Note: the topping goes on after baking
- Topping:
- 1 cup dark, semi-sweet, or milk chocolate chips
- 10 ounces mini marshmallows
- Optional: 1 cup chopped peanuts, walnuts, pecans, macadamia nuts, pistachios, or for nut allergies use pumpkin or sunflower seeds
- Notes You could also use boxed brownies for this recipe making to package instructions then using my topping.
Instructions
- Preheat oven to 325 degrees.
- Prepare a brownie-sized pan 12 x 9 or 13 x 9 if you don't want them so thick. Grease and flour or line with parchment paper.
- Stir the cocoa and melted butter together in a bowl.
- Add sugar and eggs until evenly blended.
- Stir in the vanilla, espresso, flour, salt. and nuts if using.
- Bake for about 25 minutes using the toothpick method in the middle to see if the brownies are set.
- Remove brownies from the oven and top with marshmallows, and chopped nuts.
- Broil on low until the marshmallows are lightly toasted.
- Remove from oven and let them cool for around 8 minutes.
- Sprinkle with chocolate chips and nuts.
- Cool completely before cutting.
- Place back in the oven for about 3 minutes, or until the marshmallows double in size. Remove from oven and let cool.
