Winter time tends to pack on the pounds eating comfort foods. I found this delicious sandwich that awesome on your waistline, filling and low in calories! Chicken Chipotle Avocado Sandwich is a sure taste please when your counting calories. Get your summer body ready!




During the winter months I really try not to pack on the pounds eating all comfort foods! The other trap I seem to get into is grabbing something on the run.

Working long hours, time escapes me. I am too tired and never at that point want to worry about cooking something healthy. I just wanted something filling and fast.

That makes us eat foods that are high in calories with unhealthy quick fixes mostly happening late at night.

This in one of my go to sandwiches which is a complete meal in itself. No matter what time of the day it is, it's easy to digest, filling and healthy.

There's way less calories in this delicious Chicken Chipotle Avocado Sandwich making it homemade and healthier. I never buy pre made cooked chicken since it's laden ed with unhealthy preservations!

I often make several chicken breasts ahead of time. I usually layer wax paper between them, place in freezer bags and then they are ready to make this great sandwich freshly heated up. The best part about doing this, I know exactly what went into every bite!

Chicken Chipotle Avocado Sandwich


instructions:

2 to 3 tablespoons extra virgin olive oil
1 tablespoon lime juice
1/2 teaspoon chipotle chile powder
2 or 3 boneless breast sliced in half depending how many sandwiches you want
slices of provolone or mozzarella reduced fat
whole wheat or multi grain hamburger buns
1 avocado peeled, seeded and sliced
lettuce of your choice I use romaine or arugula
Marinate the chicken in olive oil, lime juice and chipotle powder in a zip lock bag for several hours or over night.
Grill them on high heat on a gas grill or fry in a cast iron grill grated pan. Cook until juices run clear.
Toast the hamburger buns, add the cheese, lettuce avocado then chicken topping with the chipotle sauce.

Chipotle mayonnaise recipe:
1 cup mayo fat free 
2 chipotles in adobo sauce
1/2 of a lime juiced and seeded
1 tablespoon adobo sauce
salt and pepper to taste
Place all in a food processor and blend until smooth and combined.
