Baked Zucchini Parmesan Casserole Recipe


What a delicious casserole dish this is. Usually this is one of my go to recipes for any picnic outing. Picnics never have enough great side dishes. This one will knock it out of the park with everyone wanting more and the recipe.

2 pounds zucchini sliced 1/2 inch thick
Italian flavored bread crumbs
Grated cheese
2 Egg whites beaten
salt, pepper to taste
Mozzarella shredded
Garlic granulated
Olive oil

Optional: you can add crushed sausage and meatball in between layers to make this a meat lovers casserole.

Dip slices of zucchini into beaten egg whites then into bread crumbs. Place on a parchment lined cookie sheet and bake drizzled with olive oil on 400 degree oven for around 20 minutes.
In an oil sprayed casserole dish. Layer the zucchini with marinara sauce, sprinkling of granulated garlic, salt, pepper to taste,  grated cheese, shredded mozzarella, keep building layers, until all the zucchini is used in the casserole.  Top with more shredded mozzarella.
Bake until cheese is melted, browned on top and bubbling.
