A fritter that is so full of flavors you will be addicted.


I make these often when zucchini is in abundance in the summertime. We just love these as an appetizer or side dish!


If you are looking for a great recipe that's savory, this will be your new go-to recipe for zucchini.


I have also baked and air fried them, of course, everything tastes better fried, but with a little cooking spray, you can adapt these to a low-calorie fritter.


One other thing I love to do with these zucchini fritters is to dip them in a fresh heated marinara sauce sprinkled heavily with Parmesan cheese, but that's just my addiction!


These are by far the best zucchini fritters I have ever eaten!

Addicting Appetizer




When I said best ever I can tell you I am hooked on these fritters.



They are delicious plain or dipped in tomato sauce as a bonus appetizer!



We really love these just sitting around watching a movie to snack on.



They aren't really filling, just a light little fritter and perfect when entertaining guests.

We love to dip them in a warm tomato marinara sauce when serving as an appetizer, sprinkle some grated Romano cheese and they are delicious!

Healthy Cooking Alternatives



As I mentioned previously, you can air fry these.


I lay them down on an oil sprayed piece of foil, place the air fryer on 400 degrees and air fry around 13 to 15 minutes depending on wattage.


Just watch them.


They are still delicious and fewer calories, a healthier version.


If you decide you would prefer to bake these, the easiest way I found is to use an ice cream scoop to place these into a greased cupcake tin that is also oil sprayed first. Bake for around 35 minutes on 400 degrees hot oven.

Not a Fan Of Zucchini?



Zucchini is one of those vegetables that have high water content.


If you would like to substitute this shredded squash for another vegetable, you will need a shredded grated cauliflower, chopped mushrooms, finely chopped
broccoli works well or even other kinds of squash.


For fruit fritters, bananas and cinnamon go well in this recipe, grated apples or peaches.


Try some batter fried with just a little in a bowl first and see if you like other combinations.


This appetizer is inexpensive to make and you really can get creative switching out the ingredients and adding more seasonings as well.

Best Zucchini Fritters

If you love zucchini fried, these fritters are over the top delicious. Moist inside, crunchy outside and the perfect quick appetizer of side dish.

ingredients:

  • 2 1/2 cups shredded zucchini
  • 1/4 cup flour
  • 1 teaspoon baking powder
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • 1 egg beaten
  • 1 teaspoon each granulated garlic, dried oregano, a pinch of basil
  • 1 few pieces of rosemary chopped 1/4 teaspoon
  • pinch of cayenne pepper
  • salt, pepper to taste
  • Optional: marinara sauce for dipping and Romano Cheese
  • Canola or Vegetable oil for frying
  • Optional: you can add a few tablespoons of chopped hot peppers or bell peppers  for a change of flavors

How to cook Best Zucchini Fritters

  1. Grate the zucchini and chop the peppers if using. In a bowl beat the egg. Stir in the flour, baking powder, oil, Parmesan cheese, and seasonings.
  2. Heat around 2 inches of oil in a pan and fry until golden on one side then flip. Drain on paper towels. 
  3. These are best served warm.
  4.  Great dipped in marinara sauce sprinkled with lots of Romano and Parmesan mixed cheese!

    1. Hi Kristen good call out the oil for frying is separate from the oil in the batter. Thanks, you need around 2 cups of oil to fry the fritters in a medium size fry pan. Thanks for pointing that out.
