A fritter that is so full of flavors you will be addicted. I make these often when zucchini is in abundance in the summer time. We just love these as an appetizer or side dish!

When I said best ever I can tell you I am hooked on these fritters.



They are delicious plain or dipped in tomato sauce as a bonus appetizer!



We really love these just sitting around watching a movie to snack on.



They aren't really filling, just a light little fritter and perfect when entertaining guests.

You can also make it a Paleo version just adding coconut flour instead of regular flour, then fry them in coconut oil.

Whether you make these Best Zucchini Fritters as an appetizer or side dish, these fritters will go great with any meal and snack.



We love to dip them in a warm tomato marinara sauce when serving as an appetizer, sprinkle some grated Romano cheese and they are delicious!

Best Zucchini Fritters

prep time: 10 minscook time: 15 minstotal time: 25 mins

ingredients:

2 1/2 cups shredded zucchini
Optional: 1/2 cup bell pepper chopped 
1/4 cup flour
1 teaspoon baking powder
2 tablespoons olive oil
1/4 cup grated Parmesan cheese
1 egg beaten
1 teaspoon each granulated garlic, dried oregano, pinch of basil
1 few pieces of rosemary chopped 1/4 teaspoon
pinch of cayenne pepper
salt, pepper to taste
Optional: marinara sauce for dipping and Romano Cheese
Canola or Vegetable oil for frying

instructions:

Grate the zucchini and chop the peppers if using. In a bowl beat the egg. Stir in the flour, baking powder, oil,  Parmesan cheese and seasonings. 

Heat around 2 inches of  oil in a pan and fry until golden on one side then flip. Drain on paper towels. Great dipped in tomato sauce or just plain.
Note: I had a reader suggest if you have zucchini that is very wet and full of water to blot it dry with a paper towel first! Great dipped in marinara sauce sprinkled with cheese!

    1. Hi Kristen good call out the oil for frying is separate from the oil in the batter. Thanks, you need around 2 cups of oil to fry the fritters in a medium size fry pan. Thanks for pointing that out.
