Shrimp Scampi and Scallop Pizza
This is a shrimp and scallop-topped pizza dough similar in flavor to white wine and lemon sauce.

Ingredients
- 2 tablespoons salted butter
- 2 tablespoons olive oil
- 1 tablespoon freshly minced garlic
- 1/4 cup white wine (Pinot Grigio is what we used)
- 1/2 teaspoon oregano
- 2 tablespoons lemon juice
- 12 medium shrimp cooked tails off and deveined
- 6 or 7 scallops (bay scallops)
- 1 pound of pizza dough, homemade or store-bought (risen on pizza pan)
- 6 to 7 thick slices of mozzarella or provolone
- 1/2 teaspoon dried mixed Italian herbs
- 1/4 cup grated Pecorino Romano cheese
- Garnish: 1 tablespoon chopped fresh parsley and torn fresh basil leaves
- Optional: sliced plum tomatoes
Instructions
- Let the dough rise, then take the pizza dough and stretch it out onto a pizza pan.
- Next: Grill, broil, or pan-fry the shrimp and scallops together.
- Add melted butter, white wine, 1/2 teaspoon granulated garlic and 1 tablespoon olive oil in a frying pan.
- Add the shrimp and scallops to a heated pan and sauté for 3 to 4 minutes, or until the scallops are cooked.
- Cook for 2 minutes on each side, set aside.
- Preheat the oven to 430 degrees.
- When the dough has risen, bake it brushed with olive oil, until browned and crispy.
- Remove from the oven, top of the pizza dough, adding the thinly sliced tomatoes, top with fresh garlic, spices, adding salt, pepper to taste, and grated cheese.
- Slices of mozzarella and cooked seafood.
- Drizzle olive oil all over the top if there is not enough oil juice from the seafood.
- Broil on high until tomatoes are soft, and the cheese is browned and crispy. This doesn't take long, around 3 to 4 minutes, watching carefully.
- Garnish with basil and fresh parsley.
