Homemade cinnamon roll cookies is a favorite recipe in our home, buttery cookies with a cinnamon sugar filling, and vanilla icing drizzled over the top and we even have some fun topping suggestions below for you to try.

Our delicious cookie will certainly fill that craving when you're wishing for that fluffy style cinnamon bun with all the flavors of that favorite roll all in this cookie version.

Buttery Filled Cinnamon Bun Roll Cookies



These cookies are buttery cookies and the dough is just perfect for the filling.


I just love the flavors in these and they go perfect with a cup of coffee, or tea and comforting with a cup of hot cocoa in the cooler months with this delicate filled cinnamon-filled cookie.


The cookie also looks perfect on a Christmas cookie tray with its fall spice flavor and for all my cinnamon lovers out there also try our Snickerdoodle recipe they're another favorite cookie.




Step-by-Step Cinnamon Bun Roll Cookies

  1. heat the oven and prepare cookie sheets by lining them with parchment paper
  2. make the dough
  3. make the filling
  4. roll out the dough
  5. cut in half
  6. roll into rectangular shapes
  7. fill the dough
  8. roll up like a jelly roll
  9. slice and bake
  10. cool
  11. make the frosting
  12. drizzle cooled cookies

Tips

  • add 1 tablespoon of whipped cream cheese for cream cheese icing to the powdered sugar
  • always preheat the oven
  • cream the butter and sugar till light 
  • cut the dough into 2 even pieces
  • cookies make 16 cookies each roll
  • cool completely before frosting
  • add a pinch of cinnamon to the icing or maple flavoring
  • add crumbled cooked bacon to the top of the cookies and maple flavoring to the icing for bacon maple cinnamon bun cookies on top




Flavor Additions or Mix-ins (in with the cinnamon sugar)

  • finely chop nuts of any kinds
  • minced raisins
  • coconut put through a food processor
  • add any kind of jam to the filling and warm it first so it's easy to spread
  • mini chocolate chips

Cinnamon Bun Cookies



This dough is very versatile and a nice substitution for a mini taste of a cinnamon roll, no not a fluffy soft yeast-risen dough but certainly, a burst of delicious filling and a bit of icing will do the trick when you're craving those cinnamon buns/rolls.


In the meantime go through the tips, and also adapt the cookie to how you like your cinnamon buns, we love the addition of maple flavoring in the icing and bacon on top.

A cinnamon roll cookie with all the flavors of that delicious yeast-risen roll all in a little buttery bite with a delicious drizzle of icing on top

Ingredients

  • Dough:
  • 1 cup butter, softened
  • 1 cup sugar
  • 2 egg yolks
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2 cups AP flour
  • Filling
  • 3 teaspoons ground cinnamon
  • 1/2 cup dark brown sugar
  • Mix together and set this aside.
  • Icing Powder:
  • 2 cups of more of powdered sugar
  • milk enough for free-flowing icing
  • pinch of cinnamon

Instructions

  1. Preheat oven to 350 degrees.
  2. Prepare cookie sheets with Silpat of parchment paper.
  3. In a large mixing bowl using an electric beater, cream the sugar and butter together until light in color around 4 minutes.
  4. Add the eggs, vanilla, and salt, then add the flour until it forms an evenly blended dough.
  5. Place the dough on a large surface cutting board with a little flour sprinkled on it.
  6. Cut the dough in half.
  7. Roll out to a rectangular shape.
  8. Sprinkle half the dough with the cinnamon sugar and roll it up like a jelly roll.
  9. Do the same with the other half.
  10. Cut each into 2-inch pieces and place them on the baking sheet.
  11. (you should get around 15 pieces per dough roll)
  12. Bake in the preheated oven for around 12 minutes or until the edges brown.
  13. Make the icing and when the cookies are cooled completely drizzle a little over each one.
