2 packages 8oz each of cream cheese softened
2 eggs
1 tablespoon pure vanilla extract
1/2 cup sugar plus 1 tablespoon
1 box nilla wafers
1 bottle of triple berry smuckers ice cream topping or jam
1 bottle of strawberry ice cream topping or jam
Mini Chocolate Chip Cheesecakes (my families favorite!) |
Prepare tins. Add paper liners to cupcake tins. Put wafers in each paper cup. Set aside.
In a separate bowl mix cream cheese, eggs, sugar and flavoring and beat till smooth and creamy no lumps.

Using a ladle spoon onto wafers. Top with a teaspoon of toppings, swirl with the tip of a knife . Bake at 350 degree oven, till the center is solid around 25 to 30 minutes.

ReplyDeleteYUMMMMMMMM!!!!! Love those cupcakes and would like a sample of them all right now. I could never eat just one! I'm having no problem with comments but sure am with line spacing on blogger. Cheesecake for those of who have to watch our calorie intake. Just eat one to get a taste and I bet my wife will like them as she can throw a couple in her lunch.

These are such cute little bites of cheesecake. they are perfect for the shower for my future daughter in law.
ReplyDeleteI really don't like baking during the summer which is early for us this year -- can you believe about 10 days of 90+ temps all ready? But at a certain level the air con is working non-stop so why not bake? These look very spring or summer like, thank you for sharing.
