Made with turkey sausage, starting with ground turkey. It was better than I ever imagined! Even with substituting fat free cheeses, it was delightful Oh course all you non dieters, have at it, with full flavors using everything regular instead of fat free.

Trust me I know how hard it is to get use to eating the things we like. This is heart friendly.

I try to eat healthy but I do have to treat myself every once in awhile and go for the full fat high calorie foods.

Our family has a history of heart disease and high cholesterol. That's one of the reasons I started eating healthier after I turned 40. This recipe really satisfies.

Here is one way to get your fix when you need to eat lasagna which is high in carbs and fat!
Made with turkey sausage and ground turkey. It was better than I ever imagined! Even with substituting fat free cheeses, it was delightful Oh course all you non dieters, have at it with full flavors using everything regular.

32 ounces of homemade chicken broth or use canned low sodium 99% fat free
2 lbs of fresh plum tomatoes diced or use a 28 ounce of whole tomatoes rinsed then diced to lower the salt content
2 cups homemade tomato sauce or  jar store bought your favorite kind
2 teaspoons minced garlic
1 bell pepper finely chopped (I put mine in the food processor)
1/2 teaspoon each chopped parsley, basil, oregano fresh or dried
4 links of Italian mild turkey sausage snipped in small slices with a kitchen shears
1 pound of ground turkey
1 tablespoon oil
2 cups broken whole grain lasagna noodles
2 teaspoons grating cheese
salt and pepper to taste
pinch of cayenne
In a large dutch oven add the tablespoon of olive oil, both meats,  and peppers. Fry until the bottom starts to turn brown, stirring, this takes around 10 minutes. Add garlic and cook one minute. Next add all the liquids and spices. Cook around 20 minutes.
Add broken up lasagna noodles and 2 teaspoons grating cheese. Ladle into oven proof bowls, top with shredded fat free or low fat mozzarella cheese and broil till brown. You can also add a dollap of fat free ricotta cheese instead or both.

If you love bread with your meals, use whole grain bread cut into cubes baked in the oven with all the above spices used and sprinkle with the addition of garlic powder. Toss in with one teaspoon of olive oil till brown and crisp, add to your soup for garnish.!

For a full flavored soup not low fat, use all regular products and serve with garlic crostini's. See photo below I made 15 quarts for everyone at work for a recognition lunch. Either way this soup is fabulous!

What a fantastic soup! I actually have some spinach lasagna sitting in the cupboard...maybe should just whip up some soup for the lunch today.

I love, LOVE how you lightened this. I am re-copying mine. This is a delicious soup but I cannot eat ... the way I ate last year (or the year before). The turkey links and ground turkey really add bursts of flavor. And thanks for the shout-out!

Ha-Claudia only you could find a way to be able to say Low fat and lasagna together in one dish! This looks tasty, so I am sure I will not be looking for the missing fat. Also, I have to keep an eye out for the whole grain lasagna noodles. I have seen whole grain spaghetti noodles but not the lasagna. The more grains the better. Have a nice evening!
