If you're looking to get rid of those overripe bananas this blueberry banana bread is the perfect reason to use them up.


An easy to make loaf or muffins that taste great any time of the day.


The batter is all made from scratch and by hand no electric tools are neccessary.


I just love all banana recipes you may have already tried my coconut banana cake or my delicious banana oatmeal cookies another family favorite.


There are always overripe bananas laying around but when that happens it's a great excuse to make this delicious recipe!


This banana bread with blueberries is great for gift giving and you can even use a different fruit it you like raspberries are perfect at Christmas time.

This is one of those coffee in the morning bread slathered with butter and warmed up a little it's the perfect way to start the morning.

This recipe also includes an alternative streusel topping you can also add before baking the bread.


The bread has the best aroma in the house while baking and you're going to want to cut into this before it even cools.


I really love this quick bread it's just so good you can't stop eating it.

Suggestions

(for those not fond of streusel here are some alternative)
chocolate chips

  • leave the top plain and just drizzle with frosting
  • top with chopped nuts and raisins
  • top with shredded coconut
  • drizzle the top with chocolate frosting
  • drizzle the top with cream cheese frosting


this is sugar, butter, flour and cinnamon to make a streusel topping for banana sour cream bars


Ingredients You Will Need to Make This recipe

  • shortening
  • eggs
  • blueberries
  • vanilla
  • banana mashed
  • salt
  • white and brown sugar
  • flour
  • baking powder

Tips:



  • Don't over-mix the batter
  • The bread is moist and taste great warm with butter 
  • This bread freezes well
  • Always use overly ripe bananas
  • Make it in loaf or muffin tins
  • Don't forget to grease the pan
  • Do not over-bake poke the middle with a clean toothpick if it dry when it comes out it's done
  • Substitute any other fruits fresh or dried in place of the berries

Blueberry Banana Bread

Blueberry banana bread is moist and delicious any time of the day and so darn easy to make with those old overripe ugly bananas!

Ingredients

  • 2 1/2 cups of flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon salt
  • In another bowl beat well:
  • 1 cup shortening
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 cups mashed bananas
  • 1/2 teaspoon of vanilla
  • 4 eggs
  • 1 cup fresh blueberries
  • Optional: before baking add a mixture of cinnamon and sugar to the top

Instructions

  1. Preheat the oven to 350 degrees.
  2. Grease 2 9inch loaf pan or make muffins
  3. Add dry ingredients to wet ingredients, mix till well blended, and fold in the blueberries.
  4. Note: do not use a mixer and only mix by hand for best results.
  5. Pour into two well-greased loaf pans or make muffins.
  6. Bake at 350 degrees for 45 yo 55 minutes or until brown and the middle is dry when tested with a toothpick.
  7. Another great way to use this batter is to pour this mixture into individual muffin tins and sprinkle the top with cinnamon and sugar or a streusel topping see under notes.
  8. This batter makes great muffins!

Notes

Crumb Streusel Topping: 

  • 2 cups flour 
  • 2 sticks of butter (1 cup) softened
  •  2 cups brown sugar
  •  2 tablespoons cinnamon 


Mix this all together with a pastry blender, top muffins or bread
