German Chocolate Coconut Bars are a chewy chocolate brownie layer smothered with a gooey homemade German chocolate nutty coconut topping.


For all my brownie coconut lovers, these homemade bars are decadently delicious.


We have always been a big fan of this style in the classic German chocolate cake, however, it's just too much cake for two people and these bars are the perfect bite when you crave these flavors plus they freeze well for another time.


One taste and you'll be hooked with this simple step-by-step easy bar recipe.


I love making these from scratch especially the topping a lucious buttery sweet toasted coconut mixture of deliciousness.


If you're in a big hurry, you can still make just the topping from scratch and just use a brownie mix (I'll never tell).

Step By Step Easy Homemade German Chocolate Bars

  1. Chop the nuts
  2. Toast the coconut
  3. Bake the brownies and cool completely
  4. Make the Topping and cool
  5. Top the bars with German Chocolate homemade frosting and enjoy!

Ingredients You Will Need

  • German Chocolate ( I use Bakers) or dark chocolate or chocolate chips) 
  • sugar
  • unsalted butter
  • vanilla extract 
  • water or leftover brewed coffee
  • all-purpose flour
  • salt
  • instant espresso coffee
  • eggs
  • Coconut-Pecan Topping
  • heavy cream
  • white or brown sugar
  • egg yolks
  • butter
  • salt
  • vanilla extract
  • toasted pecans, macadamia nuts, hazelnuts(I use a medley of them), or pistachios
  • toasted sweetened shredded coconut-see notes below for directions

Tips

  • first, toast the coconut and set it aside until needed(watch the coconut carefully when toasting it see instructions on the recipe card)
  • coarsely chop the nuts you're using
  • do not overmix the batter
  • use the toothpick method in the middle to ensure the brownies are baked all the way through
  • adding the instant coffee is optional you can omit it and use water instead of brewed coffee as well
  • these can be frozen, just place the bars already cut on wax paper on a cookie sheet until frozen solid then add them to flat freezer containers don't stack them
  • I used a 12 x 7 rectangular pan or you can use an 8 x 8
  • this recipe can be doubled to use a brownie sized pan

Other Additions

  • add coconut extract to the brownie batter instead of vanilla or coffee flavor
  • orange zest is a nice flavor in the batter also
  • use a medley of chopped nuts including the classic pecans
  • any kind of good grade chocolate can be used in place of German chocolate

German Chocolate Coconut Bars are an easy copycat to the taste of German Chocolate Cake. These bars are made from scratch and not a mix.

Ingredients

  • 1/2 cup unsalted butter 
  • 6 oz German Chocolate ( I use Bakers German Chocolate ) or dark chocolate chopped (or just use 1 cup of chocolate chips your choice) 
  • 3/4 cup white sugar 
  • 3 teaspoons vanilla extract 
  • 1 tablespoon water (or leftover brewed coffee) 
  • 2/3 cup all-purpose flour 
  • 1/4 teaspoon salt 
  • 1/4 teaspoon instant espresso coffee optional
  •  2 large eggs 
  • Coconut-Pecan Topping
  • 1/2 cup heavy cream 
  • 1/2 cup white or brown sugar 
  • 2 egg yolks
  •  4 tablespoons butter 
  • 1/4 teaspoon salt 
  • 3/4 teaspoon vanilla extract
  •  1/2 cup toasted pecans macadamia nuts, hazelnuts(I use a medley of them), or pistachios
  •  1  cup toasted sweetened shredded coconut-see notes below for directions

Instructions

  1. Preheat oven to 350 degrees. 
  2. Grease or line a 12 x 7 or  8 x 8 pan with parchment paper and set it aside.
  3. Place the butter and chocolate in a bowl and set in the microwave for around 30 seconds or until soft and melted.
  4. Cooldown to just lukewarm to touch.
  5. Stir in the eggs, sugar, vanilla, water (or coffee), and instant espresso until evenly blended
  6. Stir in the flour and salt evenly but do not over mix this in the batter. It's around 20 strokes.
  7. Add the batter to the prepared pan.
  8. Bake in the preheated oven for around 20 minutes, using the toothpick method in the center for doneness.
  9. Cool completely.
  10. Topping Instructions:
  11. In a medium-sized saucepan combine heavy cream, sugar, egg yolks, and salt. 
  12. Set the stovetop to low heat and just bring this to a slow boil stirring constantly.
  13. After this thickens, remove from heat add the butter, vanilla, toasted coconut, and nuts of choice.
  14. Cool completed then spread on cooled brownies.
  15. Cut only after these are completely cooled.

Notes:

How to Toast Coconut:

Stovetop: Preheat oven to 325 degrees. Spread coconut flakes on a parchment paper-lined baking sheet in a thin layer and bake in preheated oven. The flakes will toast very quickly and won't take more than 5-10 minutes so watch them carefully. After a few minutes stir the coconut and continue baking until it becomes a nice toasty color.


Microwave: Spread about 1/2 a cup a time of shredded coconut on a microwave-safe plate. Microwave the coconut in 30-second intervals; stirring each time. Continue cooking and stirring in 30-second increments until the coconut reaches the desired level of toastiness and color.
