Get Creative
I love to use leftovers from the holiday to make this little appetizer.
Leftover turkey is the perfect filling or chicken.
Just mixed with a little mayonnaise, chopped celery, onion, and garlic, you have a quick way to repurpose those leftovers and a great little snack.
You could even freeze the turkey or chicken for this use at another time.
Whether you make these into a BLT, all vegetarian or spread with your favorite cold cuts, these will feed a large crowd at any gathering and the perfect finger food.
Ingredients for Mini Rollup Pinwheels
1 package of 8 or 10 flour tortilla homemade or store-bought
assorted thinly sliced lunch meats ( pepperoni, salami, cappicola, mortadella, prosciutto, roast beef)
fancy greens, romaine lettuce or spinach leaves
thinly sliced provolone, mozzarella cheese or your favorite balsamic vinegar and olive oil mixed together with chopped fresh basil, oregano, salt, pepper and a pinch of granulated garlic powder or used fresh (you can use bottle Italian dressing if you like)
Some Quick Instructions:
Take on tortilla and layer 1 slice of each meat with at least 3 pieces either all the same of different mine is a mixed cold cut.
Then add the cheese, top with a few leaves of lettuce.
Drizzle lightly with dressing. Tuck side in, roll tightly.
I wrap them in plastic wrap for a few hours.
Then take them out and slice around 2 inch thick cuts or less.
Place on a serving tray or if traveling stack with wax paper in between when layering them in a covered container.
Other filling ideas:
Turkey salad, Egg salad, chicken salad, buffalo chicken shredded, ham salad, tomatoes and mozzarella with lettuce, crab and shrimp salad, tuna salad. Bacon lettuce and tomato with Turkey.
I am sure you can great creative, I also love avocado, cucumber, tomato and lettuce with feta cheese.
