A delicious rich Tuscan-style soup made with Tortellini, Sausage, and Spinach, and super flavorful and easy to make.

This comforting soup is packed with fresh spinach, spices and, carrots, celery, and the broth is accented with delicious tortellini pasta to make this one hearty soup.

The wonderful versatility of this soup starts with spicy Italian sausage however can be substituted with chicken, beef, or left vegetarian.

Add the fresh brilliance of spinach makes this elegant enough to serve guests when hosting a dinner party.

Easy Step by Step

  • Saute the sausage over medium heat
  • Note: if using chicken or other meat, saute the same
  • Add garlic; cook 1-minute longer
  • Stir in broth, garlic powder, vegetables, tomatoes, parsley, water, salt, and pepper to taste bring to a boil
  • Reduce heat, simmer, uncovered until vegetables are soft around 15 minutes
  • Return to a boil
  • Reduce heat, add spinach, and wine just until the spinach is wilted around 4 to 5 minutes then stir in the cooked drained tortellini. 
  •  Ladle into bowls
  • Sprinkle with cheese
  • If desired, top with crushed red pepper flakes

Optional Meat or Vegetable Suggestions

  • cubed  chicken or turkey freshly cubed and leftover works fine also
  • cubed fresh pork
  • loose sausage, loose ground pork, or ground beef
  • London broil or other beef
  • bacon or pancetta
  • a combination of loose and cubed meats of choice
  • cooked escarole
  • kale instead of spinach
  • sliced carrots
  • fresh peas or green beans can be added
  • white canned beans

One rule of thumb in making this soup, you can add really whatever you like more or less so adapt to your taste..


The soup is hearty and full of meat and pasta and serving this with some Tuscan Garlic Bread it will be a complete and total meal in itself.

Tuscan Sausage and Spinach Tortellini Soup

This is a rich tortellini soup made with sausage or another meat you prefer. The soup is done quickly in around 25 minutes and full of Tuscan Italian Style flavors.

Ingredients

  • 1 - 1/2 pounds sweet or mild Italian sausage thinly sliced or loose or if you prefer another meat use chicken, turkey, or London broil all cubed
  • 2 cups fresh spinach leaves torn or cooked escarole or kale if preferred
  • 1 teaspoon garlic powder
  • 1 cup of fingerling carrots
  • 2 stalks of celery minced
  • 1 cup water
  • 1/4 cup Pinot Grigio wine
  • 2 tablespoons fresh minced garlic
  • 3 tablespoons freshly chopped parsley
  • 2 fresh basil leaves
  • salt, and pepper to taste
  • 3 cups chicken broth  or more or use water and bouillon ( you can also make
  • your own broth if using chicken instead of sausage recipe here
  • 2 cups or more of tortellini pasta cooked to package instructions and drained
  • 2 tablespoons butter or olive oil
  • Garnish:
  • Red pepper flakes
  • Pecorino Romano grated cheese
  • Note: for creamy soups add 1/2 cup heavy cream in place of white wine plus we add 1- 12 ounce can of crushed tomatoes (or 15 ounces with some brands) for a tomato-based soup

Instructions

  1. In a 4-quart soup pot, saute the sausage over medium heat with butter or olive oil until cooked all the way through and no pink remains.
  2. Note: if using chicken or other meat, saute the same.
  3. Add garlic; cook 1 minute longer. 
  4. Stir in broth, garlic powder, vegetables, parsley, water, salt, and pepper to taste bring to a boil. 
  5. Reduce heat, simmer, uncovered, until vegetables are soft around 15 minutes. 
  6. Return to a boil. 
  7. Reduce heat, add spinach, and wine just until the spinach is wilted around 4 to 5 minutes then stir in the tortellini. 
  8. Ladle into bowls.
  9. Sprinkle with cheese. 
  10. If desired, top with crushed red pepper flakes.
