This is the perfect light summer  Parmesan Penne Vegetable Pasta, fresh with steam vegetables.



The pasta has a light sauce coating this dish with the fragrant smell of butter and wine.



We've put together some steamed broccoli, freshly cut peppers, and tomatoes and tossed them all in with a light Parmesan garlic sauce.

Easy Fresh and Healthy Meals




Whether you choose to add just a few freshly chopped vegetables with your pasta or steamed you can mix and match the many styles of pasta recipes from just the additions listed below.



A new pasta dish can be made every time!



Seriously, if you're not a tomato lover leave them out, if you want lots of red pepper on yours and just broccoli steamed, it's your recipe, make this with your favorite ingredients.



Simple and fast and one thing I learned a the sauce is perfect toss it and place assorted additions in a meal bar for them to add whatever they like!



For those wanting meat try crumbled bacon, pepperoni or even leftover cooked meats from a previous meal!











Ingredients in this recipe


  • wedge cut plum tomatoes
  • pieces or torn Fresh Basil leaves
  • Steamed Broccoli
  • Sliced and cleaned green pepper
  • Sliced Kalamata Olives
  • Olive oil
  • cloves fresh minced garlic
  • Penne Pasta cooked to package instructions
  • Pinot Grigio White wine
  • Butter
  • salt, pepper, and cayenne to taste
  • Grated Pecorino Romano Cheese
  • Optional: Italian seasoning or oregano and feta cheese

Other Additions to Add:


  • canned artichokes hearts
  • snap peas
  • English peas
  • Freshly chopped zucchini
  • Steamed cauliflower
  • Steamed Italian cut green beans or canned
  • canned corn
  • black or green olives
  • freshly chopped jalapeno peppers
  • any kinds of cubed cheese
  • fresh spinach leaves
  • diced avocado
  • sliced mushrooms raw or sauteed
  • toasted bread crumb topping
  • for meat lovers, add cooked or leftover meats of any kind, like pepperoni, crumbled bacon, cookout leftover meats, cooked, steamed or baked seafood of any kind

  • Set up an ingredient bar so the family could add whatever they like
  • Make this pasta ahead of time with just the sauce and keep in the refrigerator for anytime
  • Steamed vegetables can be made ahead of time to toss with your pasta
  • You can add cooked leftover meats to this dish from a previous meal
  • Shredded cheeses can be used instead of cubed
  • toast bread crumbs with butter and add to the top of the pasta for a nice change and crunch
  • substitute vegetable broth for wine or chicken broth

This is a delicious summer style light meal with fresh vegetables and steam broccoli over pasta. It has a butter wine sauce toss over perfectly seasoned pasta.

Ingredients:

  • 2 wedge cut plum tomatoes
  • 4 or 5 pieces or torn Fresh Basil leaves
  • 2 cups Steamed Broccoli
  • 1 Sliced and cleaned green pepper
  • 1 tablespoon of Sliced Kalamata Olives
  • 4 tablespoons Olive oil
  • 2 cloves fresh minced garlic
  • 8 ounces Penne Pasta cooked to package instructions
  • 1/2 cup Pinot Grigio White wine
  • 3 tablespoons Butter
  • salt, pepper, and cayenne to taste
  • Grated Pecorino Romano Cheese
  • Optional:  1/2 teaspoon Italian seasoning, oregano,  red pepper flakes or oregano, 1/2 cup feta cheese, or other kinds of cubed cheeses you prefer

Instructions:

  1. Cut the tomatoes, chop the peppers and add to a bowl, set aside. 
  2. Place the fresh basil, olives, and steamed broccoli in the bowl. toss with 3 tablespoon olive oil or melted butter. 
  3. Salt, pepper, and season to taste.
  4. In a small fry pan, saute two teaspoons of minced garlic on low with 1/4 cup olive oil just till fragrant around 1 minute. 
  5. Add 1/4 cup white wine and 2 tablespoons of butter to this.
  6.  Simmer 3 minutes.
  7. Cook pasta to package instructions drain. 
  8. In a large serving dish to add the pasta and the vegetables into the pasta mixture. 
  9. Pour the garlic wine sauce over the pasta and vegetables. 
  10. Serve immediately. Sprinkle with cheeses.
