This is one of my husband's favorites. Whenever we go for breakfast or lunch he looks for Chicken-fried Chicken.


You know you’re in the South when Chicken Fried Chicken with peppered milk gravy is on every Restaurant menu you go too!


It's a uniquely delicious meal to us,  we just had to try and wondered what the craze is all about.


One bite and we were hooked on it, now it's my husband favorite menu item.


I had to learn how to make it for him and adapted it my way!


Made with boneless chicken pieces it the provides the perfect foundation for a generous drizzle of rich peppered milk pan gravy.


This chicken is so good even without the gravy, but everyone who eats this loves the recipe and asks for it.


Definitely a keeper and the perfect comfort food but not totally an Authentic Southern recipe, it does have a bit of Italian adapted to it.

Where Did This Chicken Fried Chicken Start?




If you’re wondering why this dish is called chicken fried chicken and it’s actually pretty simple.


This is a classic easy fried chicken is made with boneless chicken breasts and skinless.


You can use other boneless chicken parts, but we just love the breasts part of the meat.

Chicken Fried Steak?




Oh, you will find this on many a menu across the Southern states also, it's another staple recipe.


It’s believed and written all over the net,  that this dish actually evolved from chicken fried steak.


German immigrants who settled in Texas brought with them a classic Austrian dish called Wiener schnitzel made with thinly pounded pieces of veal.

Again the Germans, settling in Texas where beef was abundant, used the same technique for beef.


That's where Chicken Fried Steak was born.


Now in this century when chicken is used and is made using boneless skinless chicken pieces, coated just like chicken fried steak.


That's when chicken fried chicken arrived in the Southern history of foods and became famous!


Of course, you can use steak, pork or anything else you want to coat with this recipe even Venison if you're not a chicken lover!

When it comes to fried chicken dishes, living in the South, it's fantastic.



Almost every restaurant all over the globe has chicken fried steak. We like that too!



This chicken is just great comfort food with a little spice to it.

A Southern Home Down Cooking Favorite




One of my husband's favorite way's to eat chicken is this way.



Whenever we go out this is the first thing he looks on the menu for.



I decided it's time to make it myself and I was astounded how easy it was

It was tender juicy and not all that heavy breading that you get in the restaurants.


My husband said this was the best he ever had, so I was so pleased being an Italian cook, I aced this one!


He loves chicken fried chicken however being a hunter, we have made this recipe with pork, venison, and boneless ribeye and it was fabulous.


I just put the gravy on the side or make an au jus for it.


This dish is not totally Southern other than the gravy,  but everything I make usually is adapted with an Italian flair too it, just like this recipe.


The original recipe calls for onion powder and no herbs in which you can certainly add and adapt to be Authentic and more Southern.

Old Fashioned Crispy Fried Chicken




Chicken Fried Chicken, has such a crispy outside coating and a juicy fork-tender tasty bite!



The gravy is a bonus on top and makes all the flavors come together with a nice Southern touch of deliciousness!



I personally could eat this chicken with nothing else on it! The chicken is absolutely delicious naked!

Ingredients You Will Need:


  • 6 - 8 oz boneless skinless chicken breasts
  • Note: (you can use any boneless meat steak or pork also which would be more like a German dish)
  • flour
  • buttery style cracker crumbs or panko breadcrumbs
  • kosher salt
  • dried oregano and parsley combined
  • granulated garlic powder
  • smoked paprika
  • pinch of cayenne pepper
  • buttermilk or use evaporated milk
  • vegetable oil blended with olive oil or use canola oil
  • Optional herbs to use 1 teaspoon each, rosemary, basil for Italian flavored coating.
  • Large plastic zip lock bag

Ok, well no I am not originally from the South, but have lived here for over 25 years now.


I actually was born and raised in Utica, New York which is referred to as "little Italy".


If you are looking for a pure Southern recipe 100%, you won't find it in my adapted version.


I promise you this, it's truly delicious!



Here is what I serve with my Chicken-fried Chicken, Sweet Potato Garlic Biscuits, roasted garlic mashed potatoes, corn on the cob, and skillet strawberry shortcake for dessert.


You can also serve this with cornbread, grits and baked beans.


You will certainly be loving the coating on this chicken recipe, it's really awesome and so versatile.

This is a Southern chicken found in almost every recipe in the South in America.
It's crispy, slathered in peppered homemade gravy, usually served with homemade biscuits, corn on the cob and barbecued flavored beans.

ingredients:

  • 6 - 8 oz boneless skinless chicken breasts pounded and thin 1/2 inch thick
  • Note: (you can use any boneless meat steak or pork also which would be more like a German dish)
  • 2 1/2 cups flour
  • 1/2 cup crushed buttery style cracker crumbs or panko breadcrumbs
  • 1 1/2 teaspoons kosher salt
  • 1 1/2 teaspoons dried oregano and parsley combined
  • 2 teaspoons granulated garlic powder
  • 1 teaspoon smoked paprika
  • pinch of cayenne pepper
  • 1 cup buttermilk or use evaporated milk *see tip below*
  • vegetable oil blended with olive oil or use canola oil
  • Optional herbs to use 1 teaspoon each, rosemary,  basil for Italian flavored coating.
  • Large plastic zip lock bag

How to cook Chicken Fried Chicken

  1. Chicken Fried Chicken Instructions:
  2. Place the flour, crackers, herbs, and spices in the ziplock bag. 
  3. Dip the chicken in buttermilk or evaporated, shake in the seasoned flour.
  4.  Dip again, then dredge into the flour again.  Lay on wax paper until the oil is heated.
  5. Heat oil.
  6. In a large frypan heat oil to medium heat around 4 or 5 on the dial.
  7. Fry the dipped chicken fillets in oil (around 3 minutes on each side depending on thickness) until they're getting a nicely browned coating.
  8. Make the Country Gravy:
  9. 3 tablespoons butter or
  10. 1 lb loose pork sausage
  11. 3 tablespoons bacon grease
  12. 1/4 cup flour
  13. 3 cups of milk
  14. salt and pepper to taste
  15. Brown pork, use drippings of choice, add the flour and stir. Keep stirring until it thickens around 15 minutes.
  16. Place Chicken on the plate. Pour hot gravy over it, there you have it Southern Style Chicken Fried Chicken.
  17. *Buttermilk Tip: If you don't have any buttermilk, add 1 tablespoon white vinegar or lemon juice per 1 cup milk to substitute.
