Broccoli and Cheese Cornbread

This broccoli and cheese cornbread is the perfect soft vegetable bread to serve with any kind of meal.



It's loaded with cheeses that compliment the broccoli perfectly.



If you're making any kind of Ham Cabbage and Potato Soup, Italian StewOne Pan Casserole, or Chili, this tastes fabulous alongside those comfort meals.



This easy to make homemade cornbread is a winner for outdoor picnics and barbecues too.



It's addicting. It's one of the most delicious pieces of bread I have ever made.



Check out the suggestions and additions you can add if you're not a broccoli fan, substitute another item.

Cornmeal Tips




There are plenty of brands of cornmeal shopping.



Making cornbread or corn muffins with a combination of fine and medium-ground cornmeal will make a light and tender bread with a little bit of crunch.



Using a coarser crumb typically will produce a bigger crunch.



Also, there is self-rising cornmeal which I don't recommend in this recipe as you would really have to adapt the ratio of flour and baking leveling agents.

Other Mix-In Substitutions


  1. shredded zucchini
  2. finely minced cauliflower
  3. any kinds of shredded cheese you like better than cheddar
  4. chopped bell pepper
  5. black olives
  6. garlic cloves finely minced
  7. finely minced onions
  8. diced ham, cooked sausage or chopped hotdogs

  • broccoli florets steam and chopped

Broccoli and Cheese Cornbread

Broccoli and Cheese CornBread

prep time: 10 minscook time: 45 minstotal time: 55 mins
This is a delicious quick bread perfect for stews and chili. Cornbread is a fun delicious a little sweet bread that served warm with butter is just a special treat for any bread lover.

ingredients:

  • 1 cup cornmeal plus 1 tablespoon
  • 1/3 cup flour
  • 1 stick butter
  • 2 teaspoons honey
  • 4 large eggs
  • 12-ounce ricotta, or sour cream
  • 1 teaspoon each salt, granulated garlic
  • black pepper and cayenne to taste
  • 1 cup broccoli florets steam and chopped
  • 2 cups shredded cheese I used a mixture of Dubliner, provolone, and sharp cheddar extra for on top
  • 2 tablespoons grated Parmesan cheese
  • 1/4 teaspoon baking soda
  • baking powder 1- 1/2 teaspoons

instructions:

  1. Grease a 12 x 12 pan. 
  2. Preheat oven to 350. 
  3. Mix all ingredients until blended together folding in the broccoli last.
  4. Pour into pan. 
  5. Bake for 35 to 45 minutes, until the middle, comes clean using the toothpick method. 
  6. I cut this into pieces and sprinkle shredded cheddar on top while still warm
