What's An Air Fryer?
An air fryer is an innovative new kitchen appliance becoming very popular to cook with.
It works by circulating hot air that contains fine oil droplets around the food to produce a crunchy, crispy exterior.
Air-fried foods are said to be a much healthier alternative to deep-fried foods since they lower the content of fat and calories.
Air-frying requires a fraction of the oil to achieve a similar taste and texture to deep-fried foods that require lots of oil to fry in.
Easy to Make
Tacos are fun to make and perfect to celebrate Cinco De Mayo or just on Taco Tuesday nights!
These are great in the summer since they can be a light meal or snack for any time.
Since chimichangas are usually deep-fried and are one of my favorite Mexican foods, this recipe did the trick on my craving for them.
I have always baked my chimichangas until now, these taste great air fried.
I decided to experiment with a low-carb version and the family approved and loved them.
Meat Suggestions
- Chicken breast shredded or cubed or use leftover rotisserie chicken
- Shaved or sliced boneless steak
- Shaved or pulled boneless pork roasted
- Loose meat of any kind, lamb, beef, chicken, turkey, venison seasoned with taco mix
- Chopped deli meats IE Corned beef, ham, chicken
- Canned meats of any kind
Topping Suggestion Serving
- Shredded lettuce
- Chopped tomatoes
- Chopped celery
- Olives
- Chopped onion
- Sliced radishes
- Sliced beets
- Chickpeas
- Hummus
- Shredded low fat or regular cheese
- Sour cream fat-free or regular
Filling Suggestions
- Any kinds of cooked boneless meats or shellfish
- Beans of any kinds canned and drained
- Shredded cheeses
- Rice cooked
- Medley of roasted vegetables
- Leftover meats like chicken from another meal
- Cold cuts
- A combination of any of these
- Queso, taco sauce, salsa
Tips to make Air Fried Tacos
- Brush the air fryer with cooking oil so they don't stick and the tops of the flour tortilla for crispness.
- Warm the tortilla slightly, they are easier to roll up
- Line the Air Fryer with oil sprayed foil for easier cleanup
- The last tip I have, be careful the filling is hot hot hot
- Keep the filling in the center when folding
- These make great appetizers or full meals by adding a salad shredded on top with salsa and sour cream with olives and jalapenos
- Always brush the basket with the cooking oil that you're using and brush the tops of the croquettes lightly with cooking oil.
- Regular sprays can damage the basket so it is advised to brush on cooking oil or butter instead of using spray cans of oil

- flour tortilla low carb or regular
- regular or fat-free refried beans
- boneless chicken breasts cut into small bite-sized pieces or use any meat you like cooked on top of the stove or in the air fryer
- romaine lettuce cut up or shredded
- grape tomatoes cut into halves
- chili powder
- granulated garlic powder
- cumin
- oregano
- salt, pepper to taste
- chopped parsley or cilantro
- a thickly sliced cheese or any kind that for melting cheese like Mozzarella, Swiss, Havarti cheeses
- Optional:
- taco sauce or hot sauce
- cooking oil spray for spraying the taco
- Cooked rice instead of meat or shellfish of any kind
- Any kinds of canned beans rinsed

Easy Flaky Stuffed Torillas
This low-carb version air-fried tortilla is delicious.
It has all the same great flavors in these air-fried tacos as regular friend tacos.
A healthier version for a healthy diet and no guilt!
If you haven't tried Air Fried Tacos and haven't gotten an air fryer yet, these air-fried tacos come out great in them when you do!
Hopefully, you already have an air fryer, I am so happy I tried making these tacos in there, now I have half the calories as before!

Air Fried Tacos

These are flour tortilla stuffed with meat, beans, and cheese fried in an air fryer. They are fabulously made with chicken and fat-free refried beans. You can adapt them to my many suggestions.
Ingredients:
- 1 package of flour tortilla low carb or regular
- 1 can fat-free refried beans or any kind of beans you prefer
- 2 large cooked boneless chicken breasts cut into small bite-sized or any boneless meats or shellfish cooked, canned
- romaine lettuce cut up or shredded or another kind of chopped lettuce
- grape tomatoes cut into halves
- 1 tablespoon chili powder
- 1 teaspoon granulated garlic powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- salt, pepper to taste
- chopped parsley or cilantro
- a thickly sliced cheese or any kind that for melting cheese like Sharp Cheddar, Mozzarella, Swiss, Havarti cheeses
- taco sauce is optional
- Topping Suggestions:
- Shredded lettuce
- Chopped tomatoes
- Chopped celery
- Olives
- Chopped onion
- Sliced radishes
- Sliced beets
- Chickpeas
- Hummus
- Shredded low fat or regular cheese
- Sour cream fat-free or regular
- Queso, salsa or taco sauce,
Instructions:
- In a large oil-sprayed fry pan (or use your air fryer), saute the chicken cut up with all the seasonings listed.
- When chicken is browned on both sides, stir in the refried beans. Turn off the stove and cool the mixture.
- Layout the tortilla on a flat board, add a cheese slice, (a tablespoon or more depending on the tortilla size of the filling mixture) you can also add a teaspoon of taco sauce if desired.
- Roll up folding sides in and seam down on the plate.
- These are ready to fry.
- Brush with oil or cooking spray oil or place on oil sprayed foil.
- Turn the air fryer to 400 degrees or at the highest setting you can brush the basket with oil instead of using foil also.
- Place the taco in the air fryer seam side down.
- Spray with tops with cooking spray oil and air fry until golden brown.
- Air fry for around 10 minutes then checks them to see if they are evenly browned.
- Baking alternative:
- Place them on parchment paper on a cookie sheet.
- Spray the bundles with oil spray.
- Preheat the oven to 400 degrees, bake for 20 minutes or until browned and crispy on top.
- The filling is very hot, and cool for a few minutes before eating.
- Serve with taco sauce or hot sauce and chopped parsley for garnish.

ReplyDeleteWhen we downsized to our home in Florida, I got rid of all my kitchen gadgets. I don't have an Insta-Pot, air fryer or even a slow cooker. This sounds like a good item to have, especially if you are trying to cut back on fats.
