No matter what bread you have on hand, these Mini Breakfast Pizzas will be a hit with the pickiest eaters in your home!

The numerous toppings or filling combinations will make it easy for everyone in your family happy with these tasty breakfast pizza ideas.

Scrambled eggs are the easiest to eat on the go and the main filler for your pizza, however, if you want a fried egg instead go for it, but better for a sit-down at-home breakfast on the weekend.

These can be made on top of bread, bagels, biscuits, and just some of our fun ways to create this breakfast treat.

These were made specifically to hide some ingredients that the kids wouldn't eat but love pizza and just by adding cheese and sauce on the eggs, it was a winner right off the bat.

Now the little ones ask for them and sometimes even add pepperoni or diced ham to top the eggs.

Since they're big fans of naan and English muffins,  we made them today with both.

If you choose to set up a breakfast bar, then they can add the cooked toppings on their eggs, you add the cheese and pop it in the oven until it melts.

These can be made ahead of time added to a cookie sheet, then frozen and they are ready to reheat any morning when you're in a hurry.

The one important tip is bread will get soggy if you don't toast them first while a bagel holds up and is sturdier for sauces.

How to Make Breakfast Pizza

  1. First, choose a bread you want to use and either toast it or leave it plain (depending on making it open-faced pizza or a sandwich pizza
  2. scramble the eggs on the stovetop in some butter
  3. add some scrambled egg to the top of the bread you've chosen
  4. then a topping of choice (which may just be cheese
  5. add some sauce or condiments


this is cubed pepperoni to put on pizza or eat as a snack


Topping Suggestions

  1. jarred sauce
  2. shredded mozzarella cheese, cheddar cheese, provolone, feta, or another you prefer
  3. condiments
  4. taco sauce
  5. marinara sauce
  6. alfredo sauce
  7. hot sauce
  8. soy sauce
  9. salad dressing that you prefer
  10. country gravy
  11. hollandaise sauce

Pick a Breakfast Egg Favorite Combination

(using any kinds of bread, pre-cooked foods, finely minced vegetables, cooked meats, or leftovers from a previous meal when reading combinations)

  19. Bread to use: sourdough, naan, English muffins, Italian bread, white bread, rye, bagels, wraps plain or flavored, refrigerated pizza biscuit dough (you can use a split croissant however do not add too much sauce it will be soggy)

Tips

  1. prepare these ahead of time and freeze on a cookie sheet then stack after frozen in freezer bags
  2. reheat at 400 degrees for 10 minutes in a toaster oven, standard oven at 400 degrees for 8 to 10 minutes, or air fryer for 3 to 4 minutes at 400 degrees 
  3. use egg beaters for low cholesterol dieters
  4. for saving time, use precooked bacon, sausages, or deli meats if adding meat to eggs
  5. biscuits, English muffins, wraps, and bagels can be breakfast pizza sandwiches every other bread is open faced
  6. if you don't have a toaster for bread grill it in your frying pan while making the eggs
  7. perfect for brunch, lunch, or dinner even when hosting a sleepover slumber party for kids and birthday parties
  8. Tips for reheating and storing: For using the air fryer place them in an oil-sprayed basket and reheat for 3 minutes. For the oven, wrap them in foil and reheat the oven at 400 degrees for around 6 to 8 minutes. For leftovers: store in the refrigerator for up to 2 to 3 days wrapped.
  9. Note: if you prefer a crispy cheese on your pizza topping use the broiler to crisp the cheese on high for around 1 minute

A mini breakfast pizza with scrambled eggs and assorted toppings for a quick on-the-go to start your day!

Ingredients

  • Bread to use:
  • English muffins, naan, pita, (a slice of white or Italian, rye, sourdough toasted is recommended for these breads), bagels, tortilla wraps, pre-baked refrigerated biscuits
  • 1 egg per person plus 1 teaspoon of water whisked together
  • salt, and pepper to taste
  • butter or cooking oil spray for cooking the eggs
  • Note: basically you are creating a pizza with any bread open-faced or sandwiched together. With wraps, they would be a rollup. Choose any of our fillings, toppings, and sauces, and create your own with the ingredients you prefer on your eggs.
  • Optional 1 tablespoon per egg: assorted cheeses, diced deli meats, diced vegetables, diced pepperoni, cooked breakfast sausage chopped, and crispy bacon all can be added to the eggs

Instructions

  1. A few preps: keep the meat warm unless you're adding it to the eggs. White bread and softer bread hold up better with sauce if you toast it first Have all the toppings you're using diced ahead to save time.
  2. In a non-stick frying pan, melt the butter or use cooking spray into the pan and heat to medium heat.
  3. Beat the eggs in a bowl using a whisk until combined evenly.
  4. Pour into the hot pan and keep stirring the eggs to get them fluffy.
  5. Either toast the bread you decided to use or leave it plain.
  6. This can be done in the same pan with the eggs as shown in the photo with the English muffins, bagels, or any bread you decided to use.
  7. Build your pizza starting with the scrambled egg, add meats (unless you added to the eggs), pepperoni, marinara sauce, or another you prefer, and the cheese preferred on top last
  8. Bake at 400 degrees until the cheese melts or you can skip that step and just eat it as it is or microwave for 10 seconds or until the cheese melts.
  9. Broil the top for crispier dark cheese.if desired.
