Easy Quick and Delicious
It's perfect for weekends especially if you have visitors like we do here in Florida that spend a few days.
I really like an all in one breakfast. No standing over the stove flipping pancakes.
The batter is perfect, the topping can be adapted to whatever the family or guests will like.
I have several suggestions below, keep reading.
Tips
- Use pre-cooked sausage and bacon for faster cooking instead of cooking separately
- Always oil spray the pan for easy release
- Any fruits work great whatever you like sliced up
- Any baking mix will work fine
- Experiment with spices like pumpkin spice, nutmeg, ginger, etc.
- Use other toppings like strawberry jams warmed up or ice cream toppings
- Sprinkle with nuts, coconut, or any kinds of fresh fruits and set up a breakfast bar to add their own toppings
- Make puree fruits instead of syrup and top with whipped cream
Baked Pancake Pin for Later
The Meats
Meats need to be cooked first since the pancake bakes faster than the meat will cook.
Fry up some bacon or used pre-cooked when adding to the casserole, the bacon raw won't cook all the way through.
Also, pre-cooked sausage works better or you will have to cook the raw sausage first.
When I am in a hurry I bake the bacon first on parchment paper till crispy.
You can also use smoked ham steaks, or other meats that are cooked even leftover steak of breaded chicken is a favorite here.
Section it off
I realize not everyone loves fruits, especially my picky bunch here.
You can make sections all in one pan!
Just make each row in the pan something different.
One section with assorted fruits and meats, one plain with just meats, and then that last section with nothing.
Let them cut their piece and add what they want from your breakfast bar station with an assortment of anything they want to top it with.

A little real maple syrup and real butter are a must-have on the table for us.
You can choose other flavors and even use pureed fruits, whipped cream and have a dessert pancake.
The whole breakfast idea is to make this easy and enjoy your family and friends without standing over a stove!
Suggestions
- A great way to get the kids to eat fruits, use dried fruits if you don't have fresh fruits available.
- Craisin, raisins, apricots, figs, and dates or in combination go great in this pancake breakfast.
- Mine actually love a combination of bananas, blueberries, and apples along with pork sausages, the flavors all are perfect together!
- Mix and match whatever your family loves, even canned fruits and change the flavors with extracts in the batter like lemon and maple.
- Of course, a favorite for the kids is adding some chocolate chips in the batter.
- Also try some sliced bananas, raspberries, strawberries, chopped peaches, blackberries, raspberries or even chopped mango!
- Then if you really want a tropical treat using both the pineapple and mango add some coconut to really make it a taste of the Islands treat

An easy all in one pan breakfast pancake that is done in no time. So with many suggestions and there is something for everyone no matter how they like their pancakes!
ingredients:
- 2 cups all-purpose biscuit baking mix
- 1/2 teaspoons cinnamon
- 1/4 teaspoons nutmeg
- 1 cup milk
- 2 eggs

How to cook Pancake Breakfast Casserole
- 1 cup chopped apples
- 1/2 cup fresh blueberries
- fully cooked breakfast sausages pre-made or fried ahead
- cinnamon-sugar mixture

- Mix all ingredients in a bowl except sausages, apples, and blueberry. Spread batter in a 13 x 9 pan. Place the apples, blueberry on top of the batter, then the sausages. Sprinkle with cinnamon and sugar. Bake at 400 for 30 to 35 minutes or till brown
- Use any kinds of meats cooked, bacon, sausage, ham, steak, chicken, etc.
- Substitutes:
- Use any fruits you prefer.
