Apple Cinnamon Buns

If you're a cinnamon bun lover, these filled with bits of apples (and if you like raisins or nuts add them) just may be your new favorite way to eat them.

Apple Cinnamon Raisin Buns have always been a favorite breakfast treat growing up and mom always made this sweet yeast dough when I was a child.

As these baked in the oven I could hardly wait to eat them, Dad and I never cared about the frosting we just loved them warm right from the oven.

I loved watching her make these, back then they seemed so complicated but with these step-by-step instructions, these cinnamon buns will come out perfect every time.

Also, if you're not a raisin or apple lover, feel free to use substitute any other fruits with this yeast-risen dough, it's very versatile and does well with any fruit filling.

Step-by-Step Making Apple Cinnamon Raisin Rolls

  • Make the yeast dough and rise for 1-1/2 hours
  • finely mince the apples set aside with raisin
  • mix the cinnamon filling
  • roll out the dough into two rectangles
  • spread with the cinnamon sugar
  • sprinkle with finely diced apples and raisins
  • roll up like a jelly roll
  • slice and bake

Shopping List to Make Homemade Apple Cinnamon Raisins Rolls


  • dry yeast
  • warm water
  • milk
  • sugar
  • softened butter
  • salt
  • flour
  • eggs
  • Cinnamon filling:
  • brown sugar
  • butter melted
  • cinnamon
  • finely minced apples
  • raisins
  • Frosting Recipe:
  • powdered sugar
  • cream cheese
  • butter

Dough Tips

  1. the dough is sticky and needs a floured surface when rolling out but do not over-flour or overwork the dough
  2. sprinkle with the cinnamon mixture then add the apples and raisins randomly on top
  3. roll up like a jelly roll seam side down
  4. slice into 2-inch buns

Suggestions:


  • Milk and water need to be about 110 degrees, if it's too hot it kills the yeast
  • Soften the butter and eggs to room temperature so it is soft and mixed in easily.
  • Place the dough in a warm place covered with plastic wrap or a towel to eliminate drafts
  • The dough will be a little tacky, do not add too much flour
  • Always preheat oven to 375 degrees
  • Sweet Roll dough is basic and can be used for dinner rolls and other favorite fillings
  • Let rise for at least 30 minutes after slicing the rolls
  • Rolls are best served warm and reheated for 10 seconds in the microwave
  • Omit raisins if you're not a fan
  • Use a different dried fruit if you're not an apple fan or canned pie fillings

Suggestions for Sweet Roll Dough:


  1. For making simple hot cross buns just add raisins to this dough recipe and omit the cinnamon. Roll into balls and place in a greased pan rise, cool, and frost
  2. Make sweet dinner rolls (just make knots and rise) with no extra filling
  3. Other dried fruits can be substituted for raisins 
  4. Nuts can be added to the filling
  5. Leave plain with no frosting and use an egg wash before baking
  6. Add a different fresh fruit like blueberry, diced fresh peaches, or chopped fresh pitted cherries

This dough is so versatile when it comes to making sweet rolls, cinnamon buns, filled, plain, or frosted.


The recipe is the only one you'll ever need to create a new filled or plain bun/roll everytime you make it just create your favorite filling and follow the same steps.

Apple Cinnamon Buns

Homemade apple cinnamon raisin buns with deliciously golden brown edges, and a drizzle of sweet cream cheese icing.

Ingredients

  • Dough:
  • 2 packages of dry yeast placed in a 1/4 cup of warm water (110 degrees)
  • 1 cup milk heated to just warm to the touch (105 degrees)
  • 1/2 cup sugar
  • 4 tablespoons softened butter
  • 1 teaspoon salt
  • 3 1/2 to 4 cups flour and more for rolling
  • 2 eggs
  • Apple Cinnamon filling:
  • 4 tablespoon butter melted
  • 2 teaspoons cinnamon
  • 1/2 cup brown sugar
  • 2 finely diced granny smith apples or honey crisp
  • 1/3 cup of raisins is optional
  • 1/4 cup finely chopped nut is optional
  • Icing:
  • 1/4 cup butter melted
  • 1 teaspoon vanilla
  • 1 1/2 cups powdered sugar
  • 1 - 3-ounce package of cream cheese

Instructions

  1. Dough:
  2. Heat the milk to just slightly warm ( it's around 20 seconds in a microwave glass bowl).
  3. Add the sugar, butter, and salt and stir.
  4. In a large industrial mixer, add 1 1/2 cups of flour, and beat in the yeast and eggs.
  5. Add the remaining flour beating until it forms a soft dough.
  6. Continue beating this on medium speed for around 3 minutes or knead by hand.
  7. Be careful if doing this by hand not to add too much extra flour.
  8. This will be a little tacky.
  9. Cover and let rise in a warm place until doubled in size (usually 1 1/2 hours).
  10. Filling:
  11. finely mince the apples and set them aside (sprinkle with a little lemon juice so they do not discolor) place the raisins in a cup and set them aside.
  12. In a small mixing bowl add:
  13. 1/2 cup brown sugar
  14. 4 tablespoon butter melted
  15. 2 teaspoons cinnamon
  16. Mix those 3 ingredients together and set them aside.
  17. Note: apples and raisins will be sprinkled randomly on the rolled-out dough.
  18. Using a rolling pin, roll the dough out into two rectangles on a floured board around 1/2 inch thick.
  19. Spread half of the cinnamon filling mixture on each dough then sprinkle apples and raisins randomly on top of the mixture of cinnamon.
  20. Roll up like a jelly roll sealing the edges seam down.
  21. Cut into 2 or 3-inch thick rounds and place on a parchment-lined cookie sheet to rise for another 30 minutes.
  22. Bake at 375 degrees in a hot preheated oven for around 25 minutes or until lightly browned on top. Frost while warm with the recipe below.
  23. Frosting Instructions:
  24. 1 1/2 cups powdered sugar
  25. 1 - 3-ounce package of cream cheese
  26. 1/4 cup butter melted
  27. 1 teaspoon vanilla
  28. Beat together and spread on warm rolls
