I have shaped this dough into hamburger buns, round rolls, twisted knots, and loaf pans, and in a pinch and hurry, I use an oil-sprayed cupcake tin!
You really can bake them into any shapes you want or use them for sandwiches, burgers, hotdogs, or just as sweet dinner rolls for any meal.
The dough can be seasoned on top before baking with sesame seeds, caraway seeds, or whatever you like, even onion or garlic powder.
You could also add herbs to the dough or minced garlic for a herb roll and sprinkle the tops with Parmesan cheese.

- sugar: granulated sugar
- milk: whole milk, full-fat milk
- butter: salted butt
- water: warm water, this should be lukewarm to the touch
- extra-large eggs beaten
- yeast: active dry yeast
- salt: regular table salt
- egg: egg wash beaten with a few teaspoons of water

- Make these in a cupcake tin to make rolls for hamburgers
- Use a loaf/bread pan, or a muffin tin
- Add herbs around 1 tablespoon to the dough, IE, Italian herbs
- Add garlic to the dough, freshly minced, around 1 tablespoon
- Sprinkle the tops with sesame seeds after using the egg wash
- Add egg wash after 5 minutes of baking, then continue baking ( keeps them from falling)
- Milk and liquids should be warm, not hot 109 degrees
- Rise in a warm place with no drafts and covered
- Serve plain regular butter or cinnamon butter
- Before baking, sprinkle with garlic or onion powder

Big Fat Yeast Rolls
These are fluffy, soft, big, fat yeast rolls with a little sweetness and are popular slathered with cinnamon butter.

Ingredients
- 4 1/2 cups flour
- 1/2 cup sugar
- 1/2 cup whole milk
- 1/4 cup butter
- 1/2 cup warm water
- 2 extra-large eggs beaten
- 2- packages of dry yeast
- 1 1/2 teaspoons salt
- Optional Cinnamon Butter Spread (recipe to follow)
Instructions
- Preheat the oven to 350 degrees.
- Grease a 13 x 9 baking pan.
- Place the milk and butter in a large glass measuring cup, and microwave till it warms and melts the butter. Do not boil; this takes around 11 seconds.
- Add the sugar and salt and stir to dissolve.
- Let it rest and cool for around 10 minutes ( this mixture should be at 109 degrees, not to ruin the yeast).
- In a bowl of an industrial electric mixer using a flat beater, add 1/2 cup warm water(109 degrees) with the yeast and stir to dissolve. Let this sit for 4 to 5 minutes.
- Add 2 1/2 cups of flour, then eggs, and mix with the flat beater.
- Add the milk mixture and the rest of the remaining flour and beat until smooth and elastic.
- Place in a warm spot covered until it doubles in size.
- Use around 3 tablespoons of dough to make round rolls, twists, or balls, and place in buttered muffin tins or a large parchment-lined 13x9 baking pan where they barely touch each other.
- Bake in the preheated oven at 350 degrees for 5 minutes and then brush with egg wash, continue baking for around 25 minutes or till lightly browned.
- Serve these rolls warm.
- Cinnamon Butter Spread:
- In a small bowl, whip together:
- 1/2 cup butter with 1 teaspoon of cinnamon.
- Add 1/4 cup powdered sugar,
- 1/4 cup honey,
- Stir in a pinch of kosher salt and 1/2 teaspoon vanilla mix until blended.
- Spread on warm rolls or eat the rolls plain.
