Apple Cinnamon Oatmeal Cookie Best Tips
- Finely chop the apples. Small pieces distribute throughout the dough and make the cookies easier to eat.
- Use old-fashioned rolled oats. They give the cookies a satisfying chewy texture.
- Don't overmix. Once the flour mixture and wet ingredients come together, mix just until combined.
- Use softened butter. Softened butter blends easily and helps create the proper cookie texture. Measure the flour correctly.
- Too much flour can make these cookies dry. Spoon the flour into the measuring cup and level it off.
- Don't pack the oats into the measuring cup. Measure them loosely.
- Let the cookies cool before frosting. Otherwise, the icing can melt right off.
- Keep an eye on the baking time. Start checking around 12 minutes. The cookies should be set but still soft.
- Just remember, if you live in a hot climate, I keep them refrigerated if it is too hot in the house the moisture may make them get moldy.

What Makes These Cookies So Special
These aren't your ordinary oatmeal cookies. The addition of fresh apples and apple juice gives them a bright apple flavor that you don't get from oatmeal cookies made with spices alone.
The finely chopped apples also add moisture, keeping the cookies soft.
The combination of old-fashioned oats, cinnamon, brown sugar, fresh apples, and walnuts gives them the flavor of an apple crisp tucked inside a homemade cookie.
And that optional maple drizzle of icing? It takes them completely over the top.
