If you've ever craved a warm, fudgy brownie but wanted the convenience of a cookie, this easy recipe is exactly what you need.

If you love chocolate and brownies, do try our Oreo Stuffed Brownies or our Peanut Butter Ritz Cracker Stuffed Brownies. Both are simple to make and are two more to add to your list of must-makes.

These moist fudgy brownies have crinkly tops and crispy edges and bake up just like the classic brownie in cookie form.

This recipe is one of my favorite baking shortcuts because no one ever guesses they started with a mix.

They're soft in the center, slightly crisp around the edges, and packed with rich chocolate flavor.

Whether you're baking for a holiday cookie tray, school bake sale, or simply satisfying a chocolate craving, these cookies disappear fast!

Questions and Answers for Making Boxed Brownie Mix Cookies

  1. Why do I add flour? A small amount of flour helps give the brownie batter enough structure to bake into cookies instead of spreading like brownies.
  2. Can I freeze them? Yes. Freeze baked cookies in an airtight container for up to 3 months.
  3. Can I freeze the dough? Absolutely. Scoop the dough first, freeze until firm, then store in freezer bags. Bake directly from frozen, adding 1–2 extra minutes.
  4. Which brownie mix works best? Most 18–19-ounce fudge brownie mixes work beautifully. Chocolate fudge varieties produce the richest cookies.

Brownie Mix Cookies

Easy brownie cookies that start with a brownie mix and transform into baked fudgy delicious brownie cookies!

Ingredients

  • 1 18-ounce box of any brand of brownie mix (sometimes they are a little larger in ounces that's fine to use)
  • 2 eggs
  • 1 tablespoon water
  • 1/2 cup AP flour
  • 5 tablespoons vegetable or canola oil (butter melted can be substituted)
  • 1/2 cup of mini semi-sweet chocolate chips
  • Note: for a different flavor addition add 1 teaspoon of orange extract and 1 teaspoon of cinnamon or pumpkin pie spice ( these will give them a fall flavor).
  • For other Mix-In or Suggestions see options under notes

Instructions

  1. Preheat the oven to 350 degrees line two baking sheets with parchment and set that aside.
  2. In a large bowl add all the ingredients and mix to combine evenly.
  3. Drop by the medium cookie scoop or large (large will take 3 minutes longer to cook and give you 20 cookies instead of 30.)
  4. Bake at 350 degrees for 8 minutes, these will be slightly crisp on the edges and very chewy in the center. For crispier edges and more cake-like in the center 11 minutes.
  5. Note: I would test one cookie to see if that's how you prefer them before baking a whole sheet full.
  6. Cool then remove from the cookie sheet.
  7. Store in air-tight containers. Cookies can be frozen for up to 6 months in freezer bags.
