Cranberry Orange Sour Cream Muffins

Ingredients

  • 1 stick (1/2 cup butter) softened
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup of fresh whole cranberries
  • zest of two oranges

Instructions

  1. Preheat the oven to 350 degrees and grease a 12-cup muffin pan. (or 9×5 loaf pan; however, this will need more time to bake).
  2. In a large mixing bowl, place all wet ingredients in the bowl and mix them.
  3. In another bowl, add all the dry ingredients and whisk to combine evenly.
  4. Slowly add all the dry ingredients and mix with the wet ingredients until a thick batter is evenly blended. Do not over-mix the batter.
  5. Fold in cranberries.
  6. Place batter in a prepared muffin pan.
  7. Bake in 350 preheated oven until edges are brown and the middle is set, around 25 minutes.
  8. Use the toothpick method in the middle to check for completed baking.
