Baked Blueberry Empanadas

This is more of an idea than a recipe because there isn't much work making baked blueberry empanadas and they are perfect for a quick sweet treat or after-school snack!

Empanada dough is so versatile, the fillings are infinite when it comes to ideas for filling these mini hand pies with whatever you have either leftover from a previous dinner, fruits in the fridge, or even canned goods.

This is more of a guideline of ideas to give you on making something with sometimes just two ingredients involved, empanada dough, any kind of filling, bake, and viola, you have anything from savory to sweet.

The best meal to make using leftover meats like prime rib or lamb, turkey, chicken, pork and even venison will make a fabulous and comforting huge pot pie in minutes!


What better way to use up leftover holiday foods than in a pie chuck full of delicious leftovers.


We usually have a prime rib on Christmas Day with beans, corn peas with maybe baked potatoes for side dishes.


I plan the meal that day so I can make this fabulous pot pie that everyone loves in my family and they actually look forward to it!


This one is done with a leftover prime rib with a beef Marsala gravy.
