Red Beans and Rice Recipe My Way

No I am not an expert on Rice and Beans in the South way of making them or in the wonderful Latin way, but an expert on spicing it up!

This is something easy to make come out perfect and a great side for barbecued meals.

Red Beans and Rice Recipe My Way

2 cups red beans or pinto beans canned or dried cooked

1 tablespoon olive oil

1 teaspoon minced garlic

2 cups cooked rice to package instructions

1 teaspoon chili powder

1/4 cup olive oil

1/4 teaspoon cumin

1/4 teaspoon garlic powder

dash of cayenne pepper

1/4 teaspoon oregano

salt and pepper to taste

Saute cooked beans in 1 tablespoon or more of olive oil with 1 teaspoon minced garlic around 1 minute. Add the cooked rice to a bowl with bean mixture. Toss with all seasonings, add the olive oil to the mixture blend together.

Serve warm with your favorite barbecued meat.
