I for one am a big blueberry fan, but I am here to tell you, this basic filling is perfect for any fruits.
I have used cherries, banana, peaches, pineapple, and red raspberries.

- quick oats
- firmly packed light brown sugar
- cinnamon
- butter chilled
- cream cheese
- sugar
- eggs
- grated lemon zest and orange zest together

These little cheesecake squares are chock full of sweet blueberries and perfect treat anytime. If you love cheesecake, these easy squares will be your new go-to recipe.
ingredients:
- 1 1/2 cups flour
- 1/3 of a cup (3 oz) quick oats
- 1/4 cup firmly packed light brown sugar
- 1 teaspoon cinnamon
- 1/2 cup butter chilled
- 8 oz cream cheese
- 1/4 cup sugar
- 2 eggs
- 2 Tablespoons (total of mixed)grated lemon zest and orange zest together
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blueberries or substitute your favorite fruit
instructions:
How to cook Blueberry Cheesecake Bars
- Preheat oven to 350. Spray an 11” x 7”-inch baking pan with non-stick cooking spray.
- Place oats in a food processor and pulse till fine.
- Add to the processor together with ground oats, flour, brown sugar, and cinnamon.
- Add butter (or you can use two forks or a pastry blender) add 2 tablespoons of water until mixture forms a crumbly dough.
- Press dough into the bottom of oil sprayed pan, bake 10 minutes.
- In a small bowl, with electric mixer on high speed, beat cream cheese and sugar until fluffy.
- Add eggs, zest, and vanilla; beat until smooth.
- Pour cream cheese mixture over particle baked crust, sprinkle blueberries over the cream cheese mixture evenly.
- Bake for 25 – 30 minutes at 350 degrees, until set.
- Cool completely on a wire rack before cutting into 12 equal bars.
