These are a moist banana sour cream bar with streusel topping and an orange glaze on top. Its the perfect coffee cake made with overripe bananas!

ingredients:

  • 8 ounces of butter
  • 3 eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla
  • 3 large banana mashed
  • pinch of salt
  • 1 cup sugar
  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • Streusel Topping:
  • 6 tablespoons butter softened
  • 1 1/4 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 1/3 cup sugar
  • 1 teaspoon ground cinnamon
  • Glaze:
  • 2 1/4 cups powdered sugar
  • 1 teaspoon orange zest
  • 3 tablespoon orange juice or more to make easy flowing

instructions:

How to cook Banana Sour Cream Streusel Bars

  1. For the Bars
  2. Cream the butter and sugar together.
  3. Add the eggs, bananas, vanilla, sour cream to the butter and sugar blend together.
  4. Stir in the flour, baking powder, salt until blended together.
  5. Pour into a greased brownie sized pan 12 x 9. Make the streusel.
  6. For the streusel:
  7. Soften the butter.
  8. Mix the sugar, flour, butter into the softened butter with cinnamon using a fork until just crumbly.
  9. Spread over the top of the batter.
  10. Bake at 350 degrees for 35  to 45 minutes or until the middle is clean with a toothpick.
  11. Make the glaze:
  12. In a bowl add the powdered sugar, orange zest, and orange juice and make a frosting glaze that free-flowing, you may need to add more juice.
  13. Drizzle over cooled bars. Dry then cut into squares.
