Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil or vegetable oil
- 1 cup broccoli florets
- 1 cup thinly sliced carrots
- 1 cup sliced bell peppers
- 1 cup sugar snap peas
- 2 cloves garlic, minced
- 1 teaspoon fresh grated ginger
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey or brown sugar
- 1 teaspoon rice vinegar
- 1/4 teaspoon black pepper
- Optional: 1/4 teaspoon crushed red pepper flakes or cayenne
- 2 green onions, sliced
- Optional: Sesame seeds, for garnish

Instructions
- Whisk together the soy sauce, sesame oil, honey, rice vinegar, ginger, garlic, and black pepper. Add red pepper flakes if you like some heat.
- Heat the oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for about 1–2 minutes per side, just until pink and cooked through. Remove them from the pan and set aside.
- Add the broccoli, carrots, bell peppers, and snap peas to the same pan. Cook over medium-high heat for about 4–6 minutes, stirring frequently. You want the vegetables tender-crisp rather than soft.
