I love using the pumpkin for puree and the seeds for snacking and our method is so easy to do fresh pumpkin pies or Pumpkin Custard Tarts.


Not only are these roasted pumpkin seeds delicious they're a healthy snack also!


Plus I will give you several other seasoning ideas and suggestions on how to make several different flavored seeds.


Give them a try, they're not only simple to make but 100 times better than store-bought and you can make them hot and spicy or sweet with my recipes.


We've been making these since the early 1960s and they're the most asked for a snack every fall season when pumpkins are in abundance.

Ingredients You Will Need To Make Roasted Pumpkin Seeds

  1. granulated garlic powder
  2. Italian seasoning
  3. olive oil
  4. salt pepper 
  5. paprika

Cinnamon Sugar Roasted Pumpkin Seeds: After roasting the seeds toss with brown sugar, a pinch of cinnamon, and nutmeg.

Pumpkin Spice Pumpkin Seeds: Before baking these, brush them with olive oil and shake pumpkin pie seasoning.

Spicy Herb Roasted Pumpkin Seeds: Brush the seeds with olive oil add some granulated garlic, Italian seasoning, and cayenne pepper.

Everything Spiced Roasted Pumpkin Seeds: After roasting brush them with melted butter and sprinkle a little everything bagel seasoning on them.

Tips

  • Always bake on parchment paper for easy release
  • Stir often
  • Try other squash seeds but bake less time for smaller seeds like butternut squash and acorn seeds
  • Bake the pumpkin along with seeds for roasted pumpkin and freeze the puree for another use in baking

Interesting Health Benefits



Pumpkin seeds are a great source of omega-3 fatty acids which have benefits to the skin, hair, and nails.


The healthy fat in pumpkin seeds is believed to improve artery, cholesterol, and brain health.


Pumpkin seeds are also a great source of minerals such as manganese, phosphorus, magnesium, copper, zinc, protein, and iron.


There is more zinc in these seeds, by eating the whole pumpkin seed including the shell.


Beneath the first part of the shell is a rich layer of minerals.


Boiling the seeds first make the shells easier to digest.

These are homemade pumpkin seeds with Italian spices and seasoning, A nice treat, and a healthy alternative for snacking. These are crunchy and very addicting in flavor!

Ingredients

  • Italian Seasoned Roasted Pumpkin Seed Recipe
  • 1 teaspoon granulated garlic powder
  • 1 tablespoon Italian seasoning
  • Sea Salt or Kosher
  • White Pepper to taste or black pepper
  • 1 teaspoon paprika or use chili powder
  • dash cayenne pepper if you like heat
  • Olive Oil
  • Pumpkin Seeds from a whole fresh pumpkin

Instructions

  1. Cut open the pumpkin with a sharp knife in half and use a strong metal spoon to scoop out the insides.
  2. Separate the seeds from the stringy core.
  3. I used two small size sugar pumpkins and you can put the whole thing in a slow cooker if you don't want to make roasted pumpkin also in the oven.
  4. Take the seeds and rinse them in a colander and remove any large pieces of the stringy core from the seeds.( I save some to plant for next year!)
  5. In a small saucepan, add the seeds to water, about 2 cups of water to every half cup of seeds. 
  6. Add a half tablespoon of salt for every cup of water. 
  7. Bring to a boil. Let simmer for 10 minutes. 
  8. Remove from heat and drain. 
  9. Dry off with a paper towel.
  10. Preheat oven to 400 degrees top rack. 
  11. Line a baking sheet with parchment paper.
  12. In a medium-size bowl, add 2 tablespoons of olive oil, add the seasonings.
  13.  Spread onto the parchment paper all in a single layer. 
  14. Bake on the top rack until the seeds begin to brown, 10-20 minutes. 
  15. Eat whole or crack them open from the side with your teeth to get the nuts out from the inside.

  40. Claudia, I'll have to try this sometime! But I'll leave out the garlic. Besides being allergic to it, I think it gets a little overplayed. I've been out to dinner and found every item on the menu (except dessert) had garlic--every hors d'oeuvres, the appetizer, the salad, the bread, the main dish and every side dish. Think I'll make both versions--the plain and the spicy; which do you like better, the chili powder or the smoked paprika?

    1. I like either one but how funny Jean, I am allergic to onions and swell up like I have the measles everywhere, so I can only use garlic, I hate this allergy but garlic is my main go to spice too.. lol try some onion powder I guess!
