This fudge with all the additions is so colorful and festive it just shouts holiday flavors with mint, cookies, and nuts

Our chocolate fudge has a hint of mint in it and is topped off with some crushed striped candy canes, it will be the hit of the season to your candy collections.

This chocolate fudge is quite addicting with crusted cookies with a bit of peppermint flavor in every single bite will surely delight any mint lover addiction.

We also love to package this up in tins for hard-to-buy folks we need to give a gift to, it's always a welcome treat.

Of course, you can add any kind of crushed cookies to this we just love our oreo without the centers in it but adapt this to be your own fudge recipe and adapt away.

Rocky Road Cookie Peppermint Fudge

Rocky Road Cookie Peppermint Fudge

A fantastic festive Holiday fudge made with crushed cookies, candy canes, and nuts. This is a mint lover's delightful confection!

Ingredients

  • 2 cups (12-oz. pkg.) semi-sweet chocolate morsels or white chocolate chips
  • 1 cup chocolate cookies of choice I used oreo's just the cookie top part chopped into small pieces
  • 1 can (14 oz.)Sweetened Condensed Milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 3 cups miniature marshmallows
  • optional 1/2 cup chopped pistachio or macadamia nuts
  • Garnish: 12 small peppermint candy puffs crushed (these are easier to chew and not crunchy, or use 4 peppermint candy canes

Instructions

  1. LINE 13 x 9-inch baking pan with parchment paper and lightly spray with cooking oil.
  2. MICROWAVE morsels and sweetened condensed milk in a large glass bowl, on HIGH (100%) power for 1 minute;
  3. Note: Stir the. morsels if some of them retain their shapes it may be necessary to microwave at additional 10- to 15-second intervals, stirring until smooth.
  4. Stir in peppermint extract.
  5. Fold in marshmallows, nuts, and cookie pieces.
  6. .PRESS mixture into prepared baking pan.
  7. Sprinkle with crushed peppermint puffs or candy canes. ( I placed them in a plastic bag and hit them with a rolling pin until fine chunks.)
  8. Refrigerate until ready to serve. Lift from pan; remove foil. Cut into pieces. Makes 48 pieces
  9. Note:this can be done on the stovetop on low heat also
