Sour Cream Muffins

This recipe for sour cream muffins is so versatile, you can add just about anything to it fruit, nuts, chocolate and they come out divine.

The sour cream in the muffin makes a delicate texture just don't over mix the batter, that's the true secret to these muffins and they will be perfect every time.

The muffins are perfect warmed with butter or berry filled jams and we first had these at a bed and breakfast in the Keyes to start our day, I just had to recreate them they are so delicious.

This super easy recipe has just a few steps, just be careful not to even use a mixer or overwork the batter and the perfect risen fluffy soft muffins come perfectly.

You'll hardly be able to wait in anticipation for them to come out of the oven the smell will make your mouth water while they're baking.

Often we even use a mini muffin pan so the kids can top them with different ingredients and make an assortment so you can also add whatever you like to them.

Not only are these simple to make but since it's a basic recipe and tastes terrific plain with no add-ins, you may like to mix it up a little and try some whole red raspberries, chopped cherries or even dried cranberries in the batter then top each one with cinnamon and sugar before baking the skies the limit with this batter recipe.

Easy Steps and Tips

  1. Prepare a muffin tin with liners and preheat the oven to 350 degrees
  2. Sift the flour, salt, baking powder, and baking soda and place in a bowl
  3. Combine two separated bowls  one with wet and the other with dry ingredients
  4. Fold the wet ingredients into dry and gently blend do not overwork this batter
  5. Fill and Bake

Other Additions or Substitutions

  1. chopped or diced fruits strawberry, blueberries(see below photo), raspberries, peaches, cherries, pear, pineapple, mango, fig
  2. dried fruits,
  3. nuts
  4. coconut
  5. mini chocolate chips
  6. sprinkle with cinnamon and sugar or regular granulated sugar before baking for extra sweetness
  7. drizzle with icing after cooling muffins
  8. make a streusel topping before baking

Perfect Muffins and a Few Tips



These muffins are not very sweet so if you have a sweet tooth make sure you're adding something to the batter or a sugar-cinnamon topping with nuts before baking.


If you love muffins, you're in for a real treat, these are amazing in flavor, and you can even add a streusel topping if you love a rich cinnamon topping which is also a nice addition to the flavor.

Adapt this versatile batter with anything additions your family loves and make your own creation.

  • some tips to keep in mind: 
  • don't over stir 
  • add any extracts and flavors you prefer in the wet step of the recipe
  • do not overwork the batter
  • first, mix the wet ingredients together in one bowl and mix the dry ingredients in another
  • add your any mix-ins last folding in just a few strokes
  • use an ice cream scoop for even-sized muffins

Ingredients

  • 1-1/2 cups all-purpose flour
  • 2/3 cup sugar
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup sour cream or you can also use greek yogurt regular or low fat for ether one
  • 5 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 3/4 cup chopped banana, fresh peaches, pears, apples or whole raspberries, blueberries and you can also use chocolate chips

Instructions

  1. This recipe is best when not overworked.
  2. Grease a muffin tin or line with paper liners.
  3. Preheat the oven to 350 degrees.
  4. Combine the flour, sugar, baking powder, baking soda, and salt in a bowl.
  5. In another clean bowl, combine the egg, sour cream, butter, and vanilla.
  6. Fold into dry ingredients just until moistened.
  7. Fold in the fruit or chocolate chips of choice.
  8. Bake in a 350 preheated oven for 20 to 25 minutes or until the middles are set using the toothpick method
  9. Garnish: sprinkle the tops with sifted powdered sugar, drizzle with powdered sugar, and water thin icing or leave plain and spread with butter or jam while hot

  3. I'd be happy to try these. They sure don't look any less than luscious. I've got loads of frozen blueberries still from last summer. If I'm careful (if I toss them with some flour, perhaps) I can make mine look as pretty, but no frosting for dieters!
